Fruit and Seed Balls

Fruit and Seed Balls (makes approx 18 balls @ 1.3 carbs each)

1/2 cup unsweetened coconut (3 carbs)
1/2 cup sunflower seed (rough chopped) (4 carbs)
1/2 cup hulled pumpkin seeds (rough chopped) (8 carbs)
1/4 cup freeze dried raspberries (3 carbs)
1/4 cup freeze dried pineapple ( 4 carbs)
1 large egg (1/2 carb)
1/4 cup butter
1/4 cup granular erythritol
1/4 tsp. splenda quick pack (1/2 carb)
1 t. not/Sugar

In a mixing bowl combine coconut, sunflower seed, pumpkin seeds and set aside.
In a non-stick sauce pan over low heat combine butter, erythritol, egg, and not/Sugar stir mixture until it thickens.
Add dried fruit and stir in until well combined and thick.
Remove from heat and let cool slightly, then stir in seed mixture until totally combined.

While still warm roll into 1 to 1 1/2 inch ball and place on a parchment lined container.
Refrigerate to set and chill.

Kevin, where are you getting your freeze dried fruits from ? I sure wish netrition would sell them.

I have bought freeze dried fruit 3 or 4 different places and usually go with the best price and shipping I can find by googling for what I need at the time. Most recently I got my pineapple at Emergency Essentials. The rest I still have from a year or so ago. When I get it I vacuum seal a large portion of it so it lasts much longer after opening.

Kevin, If I wanted to make these with some s/f honey and peanut butter for flavor instead of the dried fruits (only cause I don't have any!) how would you suggest I modify the recipe? Maybe sub the pb for the regular butter and just add some? honey to the heated ingredients? Sounds like a great snack! Thanks for any help.

Kim, the pb for the butter sounds about right but as far as the amount of sf honey I think all you need to do is remember that the heated ingredients need to be thick and sticky before combining to hold the balls together. With the kind of ingredients you are suggesting I think that stickiness can be controlled by the cooking time so the amount would be determined by taste. I will say this. Be prepare to have sticky hands when assembling these balls......

BTW, with the added sweetening power of the honey you may want to hold back a portion of the sweeteners until you detirmine the overall sweetness so as not to over sweeten the balls.

These are really good and I am always happy to find portable snacks. Very easy and quick to make, also. I subbed 1/2 cup sliced almonds for the bulk that the fruit would have added. I decreased the splenda quick pack to 1/8 t. and added 1/8 cup honey. And I used 1/4 cup peanut butter in place of the butter. These remind me of the peanut butter rice crispy treats I used to love! I used all the other ingredients as written. I didn't take the time to chop any of the nuts and the balls were still easy to assemble. They were sticky, but I found that as the mixture cooled, they were much easier to form. Thanks for another great recipe, Kevin.

WOW! Your right Pam, these are really good. I made these today and the only tweak I made to your version was that I kept the butter and used 1/4 cup peanut butter powder. Now all I have to do is decide if I want to dip them in chocolate..... Thanks for the tweak!

No they are not the same but either will work.


Freeze Dried - a process that removes ONLY the water from the fruit by using low temperatures and pressure. This process concentrates the full nutritional value of fresh fruit into a small volume that does not require refrigeration, while preserving flavor without additives.


Dehydrated/dried fruit - Is a similar method but does not use pressure. While maintaining the full nutritional value of fresh fruit it has additives to preserve and add flavor.


The additives may not be present if you dehydrate your own fruit.
