Zucchini Coconut Nut Bread and Fingers

Zucchini Coconut Nut Bread and Fingers.
(12 slices at 2 carbs each or 24 fingers at 1 carb each)

1 1/2 cups unpeeled zucchini, shredded, drained, and squeezed dry.
2 eggs

1 splenda quick pack
1/3 cup granular erythritol
2 T. not/Sugar

1/2 cup coconut oil, melted
1 cup almond flour
1 cup wheat protein isolate 5000
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla
1 tsp. cinnamon
1/2 cup pecans, chopped
1/2 cup unsweetened coconut

Prepare zucchini, shred, drain, and squeezed dry in a tea towel.
Beat eggs, sweetener mix, and oil.
Add zucchini.
Combine flours, baking powder, baking soda, salt, and cinnamon.
Set aside 1/2 cup flour mixture and add the rest to the creamed mixture.
Add vanilla and mix thoroughly.
Add the remaining 1/2 cup flour to coconut and nuts and stir to coat.
Then add to mixture and combine thoroughly.

Pour into a greased 9 x 5 pyrex loaf dish and bake in a 325 preheated oven for 60 minutes or until done.
Cool 10 min in dish before removing.

When completely cooled cut bread into fingers and slow bake on a cookie sheet in a 275 degree oven turning every 15 minutes until fingers have a nice crunch.

Looks good, and a sneaky way to get DH to eat veggies!

One thing, we don't like coconut very much ... could we substitute, do you think, for the coconut oil and the shredded coconut? (Not to mention I don't have any ... heh heh heh) I have some flax meal, could I use that instead of the shredded? Or would that just be too odd ...

Any vegetable oil would work and although flax is not a choice I would make it will most likely work.. If you want to be even sneakier you could always throw in some sf chocolate chips too.

Thats a great idea. I'd cook it until it was aldente then drain and use. Shredded raw would be too firm I think. Thanks for the idea.

Not all coconut oil tastes like coconut. The kind I have just says "Organic" and "Expeller Pressed" on the lable. It is 100% bland, with no flavor at all. I believe I read on another forum that it's the "Virgin" coconut oil that tastes like coconut.

I made a batch of these this morning using spaghetti squash rather than zucchini and they turned out quite nice with a great favor.

Bumping this again..Kevin..Wonder if you original Bake mix would work in this? Have not got my High maze to try it yet...I got a LARGE amount Zucchini and Yellow Squash coming out garden right now...

Chris, almost 100% of the time I use my flour mix in the recipes like this that call for multiple lc flours. I have resisted changing the original recipe for those that do not want to use the mix.

I will do that next time..made this and I have ate almost a 1/4 loaf already... the only thing..there is so much not/starch it wonder if you would have to add more to use in the bake mix if you sub the bake mix for the Almond Flour and the WPI 5000 because there is some in your bake mix...

no, actually I would use less. The not/sugar in this recipe is to control the cooling effect of the erythritol but since there is some already in the mix you should need less.

Wonderful use for all my crop of Zuccuni...wish I could make a bread with Yellow Squash as well..

Actually, I googled yellow squash bread and found quite a few recipes making a bread....looking very similar to zucchini bread....out there.

So....why not give it a whirl.....if my crop ever starts coming in, I might try to make a loaf and if I do...I will post the results.

I just might try that because I have alot more yellow squash now instead of zucchini...will make a loaf tommorow and see how it works..

When I made Cleo's zucchini pizza with yellow squash, I actually liked the flavor better. But the yellow squash had more liquid, took longer to cook, and did not crisp as much. You may need a little extra flour mix. Or perhaps you could grate the yellow squash, salt it, drain it, and proceed.

OMG...made it this evening. Haven't cut some off for "fingers" yet, but the kitchen smelled good. Fairly easy to make (after I got organized) and yummooooooooooooooooooooo.

Great recipe. (I'm figuring out what to do with my netrition order beyond this recipe now. LOL.

I made these last night. They are really good - I followed the recipe exactly. I did taste the bread before I made them into "fingers" and honestly I really preferred the bread.....Very tasty. If you like coconut try this - It's a nice treat.
