Betty's Broccoli-Cheese Soup

Holy cow was this GOOD. I had a hard time with portion control last night and kept returning to the pot of soup to "taste test" it, knowing full well it would still be awesome.

If anyone's looking for a great winter soup, here it is:

1 bag of frozen, chopped broccoli
2C heavy cream
1 stick butter (fat is our friend )
shake of nutmeg, shake of garlic powder
S&P to taste
4oz shredded cheddar

Combine the cream and butter, warm on the stove in a pot until melted. Add in the nutmeg and the garlic powder, S&P. Stir until combined, add frozen broccoli straight from the freezer. Warm on low to medium, adding cheese to thicken. Soup will thicken a bit during the heating.

Probably makes 4-6 servings but my gosh I had a big one.

Betty, I make a similar soup, except I add the meat of a whole rotisserie chicken ( without skin ).... YUMMMMM

This looks so yummy..I'm sure you could also make cream of cauliflower or cream of spinach using different veggies.. And you could also puree it if you wanted a thicker soup, too.

Have you tried it with 1 cup cream and 1 cup chicken stock?
(sorry -lol -2400 cals and over 160g saturated fat for 2 cups of cream and 1 stick of butter is a bit high for me)

Thanks for posting this lowcarbette!

I made it for dinner last night using Brittany84's suggestion of the chicken and Dottie's of 1/2 chicken stock 1/2 cream. I had to double the recipe of course, and took out about 3 cups to puree a bit to make it even thicker.

I am eating a bowl for lunch as we speak and it is sooo good! And it is a super easy recipe.

Hello
I was just skimming through the posts and I hate to bust anyones bubble.But do you realize there are 1,641.2 calories in two cup of heavy cream according to ******? And 13.28 grams of carbs and 176.12 grams of fat???

This soup sounds amazing, but I am thinking if you would use 1 cup water and 1 cup cream it would certainly cut the calories.

I realize Atkins put emphasis on carbs more than calories. But wow that is alot. Just wow!

ok because portion control is such an issue i put the whole recipe into ******....just incase...yanno...

the entire thing has 20 carbs after deducting fiber from the brocolli. it does have a TON of fat......if thats an issue for you, not so much an issue for me right now so im not worried about it...but drum roll please...the entire thing has 2700 calories and 300 grams of fat!


i know i just said fats no big deal, but ummm has anyone tried using half and half (like half low carb milk half cream and cutting out half the butter?) im not a good cook on my own, so does this sound doable or would you just lose to much of the yum factor.

I HAVE MADE BROCOLLI CHEESE SOUP BUT ONLY ONE SERVING AS I AM ON INDUCTION.BUT I USED 1 CUP OF BROCOLLI AND 1/2 CUP OF CREAM,AND 1/2 CUP WATER, SALT AND PEPPER AND 3 OZ CHEESE. AFTER THE BROCOLLI WAS COOKED I PUT IT IN MY FOOD PROCESSOR AND THEN ADDED THE WATER AND CREAM AND XANATHAN GUM AND THICKENED IT UP. I REALLY ENJOYED IT. I WANTED MORE

IT WAS GREAT. THEN I ATE A HAMBURGER WITH IT

STILL TOUGHING IT OUT HAVING A REALLY TOUGH TIME GETTING THIS FAT OFF. I HAVE HAD TO START OVER ABOUT FOUR TIMES SINCE SEPT. BUT IT'S A NEW YEAR, FRESH START

i made the soup and wanted to love it but it was too rich...i wish i had added something else to it, like hoodia carb count down and half cream....omit the butter...or cut in half. it was to rich made me yak.

it also needed somthing else like red pepper to spice it up...

Also, remember that on Aktins, cream is limited (I think to 2-3 tbsp or 2-3 oz a day? depending on what version)


I make a delish broccoli soup by just dumping in broccoli, and adding enough chicken broth to cover (canned works great here!).
Add garlic powder and pepper (broth is salty enough)

You can get creative and add onions or other veggies if you prefer.

Boil until the broccoli is done.

Then puree with a food processor or handheld blender wand.

Then slowly mix in just about a cup or so cream or half and half or even milk - depending on what your plan allows. You honestly dont' need much to give it a lovely creamy taste!

You can covert to broccoli cheese soup by using a little less cream and adding in a handful of shredded white cheddar cheese!

Also, you can do the exact same recipe with other things like cauliflower = cream of cauliflower soup. Jarred roasted red peppers (not packed in vinegar - just in water) = roasted red pepper soup. Asparagus = cream of asparagus. The possibilities are yummily endless!

HERE IS A LOWER CARB RECIPE AND DELICIOUS! I MADE IT YESTERDAY
TAKE 1 CUP BROCOLLI
1/2 C WATER
1/2 CREAM
3OZ CHEDDAR CHEESE CUT TINO THIN STRIPS OR PIECES.
1-3 TSP THICK N THIN NOT/ STARCH
PUT THE COOKED BROCOLLI IN PROCESSOR OR BLENDER
ADD THE WATER AND CREAM AND THICKNER BLEND THOUROUGHLY.
PUT BACK IN PAN AND ADD THE CHEESE UNTIL MELTED. SALT AND PEPPER TO TASTE AND, WOLLA! DELICIOUS SOUP. YUMMY IN THE TUMMY

THE CARBS AND CALORIES WOULD BE PRETTY REASONABLE IF YOU HAD LOWER CARB MEALS THE FOR THE OTHER MEALS. YOU COULD EVEN EAT A HAMBURGER WITH IT.OR TRY ADDING SOME COOKED CHOPPED UP HAM

CALORIE COUNTDOWN DAIRY BEVERAGE IS ALSO VERY GOOD WITH THIS RECIPE. AND ONLY ONE TSP OF THICKEN THIN NOT/STARCH.
MUCH LESS CARBS THAT WAY.

I was looking for this recipe for someone on the diabetes thread and thought I would bump this up!! My DD's favorite soup of all time!! She loves this and is only 10 years old. I cannot wait til it is cold enough out to actually want soup LOL.

Dawn which version of the recipe do you use? The original is 2 cups cream and 1 stick butter. Some of the others say 1 c cream and 1 c water or chicken stock. Just curious because I think the original would be way to rich.
