Almond Meal Muffins

I made some really yummy (& easy) banana cinnamon almond meal muffins today.
*I prefer them cold from the fridge than warm or room temperature*

Thought I'd share my recipe in case anyone wants to try something similar

4 eggs
1 C banana Davinci's
2 C almond meal
1 teaspoon cinnamon
1 teaspoon baking powder

Spray 12 muffin cups with Pam
Bake @ 350 for 30 minutes

I get 146.7 cals; 11.7 gm fat; 3.5 gm total carb; 2 gm fiber; 7 gm protein (per muffin)

I am going to give it a try. I have been making REAL banana bread for DD and DH and I am jealous. The only thing is that if they are good.....I will have a problem with portion control Do you think I could use Egg Beaters?

I don't see why you couldn't use egg beaters (?)
I always use real eggs.

Boy those sound good. Nice and easy to make too! I don't have banana DaVinci's but might use vanilla with some banana extract. Thanks for the nice recipe.

I am going to be in trouble when these come out of the oven. I tweaked it a bit. I used 3/4 C. Butterscotch Davinci's, used Eggbeaters, added 1/4 cup of pumpkin I had left over and added a dash of salt. I filled 12 muffin cups and had a little left over so I poured it into a ramekin and popped in the microwave. OMG!!! Delish and so darn easy. Thank You

Alison Jean, I'm glad yours came out yummy

DH loves them and wants to have them often.

There are so many great Davinci flavors that the type of muffins you can make is (nearly) unlimited.

Hi,

I made these this morning using Danish Pastry Davinci's and put in some dehydrated apricots for texture..Very good and very easy..

Wow, these sound great. I'll be making these this weekend. I think I'll use banana extract and some water to replace the davinci's. I'll let you know how they turn out!

You could probably do that replacement IF you added some splenda..Usually
one cup of granulated will equal one cup of Davinci's in sweetness..

this is the way I do it when I want banana bread except I use SF Toranni's vanilla and banana extract.

chocolate one's are really good also I just use SF torani's vanilla and some cocoa

These were so good last night I ate 3!!! With my tweaks, it just tasted like a sweet muffin- actually it tasted like a Snickerdoodle. I think they would be good with chili. They kinda reminded me of a sweet corn muffin. I thought about different variations today. They were very very good. Such and easy recipe... definitely a keeper.

I'm going to try to make these, today, and will be trying the cup of vanilla syrup with some banana extract. Anyone know how much extract I should be using?

I don't know how much extract you would need, but I'd guess at least a tablespoon. Banana extract isn't that strong. I used to make a low carb soy based cake that used 2 T of banana extract. It was pretty good.

I don't know.
When I add pure lemon extract I only use 1 teaspoon.

(Let us know what works for you.)

Just made these on Saturday.
BTW--we love cinnamon, so when I make these, I now add 1 Tablespoon.

Why is it that I'm seeing tons of yummy sounding recipes using Davinci's syrups now that Netrition won't ship them because it's too cold!!!???

I also now use Egg Beaters which brings calories down to 130, fat 10, carbs 3.7, fiber 2.4, protein 6.7
