The best creamed spinach!

I perused a lot of recipes and concocted my own. It is delish! Tastes very much like Boston Market's!

Saute 1 small, minced sweet onion in 2 tbsp. of butter till translucent. Add 3 10oz. boxes of thawed chopped spinach. Mix, cover and cook on low about 5 minutes.

Melt 3 tbsp. butter in a saucepan on medium heat. Stir in 4oz. cream cheese till melted. Add 1 cup heavy cream and whisk. Add 1/8 tsp. ground nutmeg, and 1/4 tsps. of granulated garlic, salt and pepper.

Stir in the spinach, onions and butter and cook a few minutes. Stir in 6 tbsp. Kraft parmesan cheese.

You may want to add a little more salt & pepper to taste.

Do you need to squeeze out the water in the frozen spinach. . .that is the thawed frozen spinach? I do in another recipe I make. . .

I didn't squeeze it out, but you may want to if you don't like it real wet. All the recipes I found used 1/4 cup of flour and I didn't, so this is thinner liquid. But the flavor is so great!
I used that extra liquid on my plate as a steak dip - yum!

What is your spinach recipe? I love spinach!

Mine is the squeezed spinach, 2 boxes, a stick of butter, garlic, lots of it, and various spices (I used to use Lawry's, or lemon pepper, plus a load of parmesan, grated kind if you have it, cooked in the microwave. . .it is not exact, kind of by ear, but decadent (this is NOT low fat!) and delicious. Haven't made it in a couple of years. . .you know, how you get out of the habit. . .of certain recipes.

The butter soaks in, it doesn't taste or look greasy. . .but it is rich. . .

But it is good enough for company for sure, and very easy, other than the tedious sqeezing of the spinach!

I plop it into a plastic colander and put paper towel on top and press and press and press! After thawing in the microwave, usually.

I just bought a mondo bag of fresh baby spinach at Costco - so I think I'll wilt it down a bit in the microwave and then try this.

I'll let you know how it turns out!

Here is a recipe I got recently from a copycat site called Robbie's Recipes. I converted it to LC and it was delicious. The liquid was not thin.

Creamed Spinach like Boston Market's

5 Tbsp. Butter, Divided
1/4 Cup All-Purpose Flour (I used Carbquik)
1/4 tsp. Salt
1/4 tsp. Black Pepper
1 dash Ground Nutmeg
1 Cup Cream
4 Oz. Cream Cheese (softened)
1 Small Onion, Minced (I used about a tsp. or so of dry minced onion)
2 10-oz. Pkgs. Frozen Chopped Spinach, thawed
1/4 Cup Water (I didn't use the water)
1/4 Cup Grated Parmesan Cheese

Melt 3 Tbsp. butter. Stir in flour, salt, pepper and nutmeg. Slowly whisk in cream; stir in cream cheese and whisk until thickened and smooth. Remove from heat and set aside.

Melt remaining butter in a skillet. Saute onions until transparent. Add spinach and water, and cook for 8 minutes. Stir spinach into creamy mixture. Return to heat until warmed through. Fold in parmesan.

Bumping this recipe up. It is our favorite way to make creamed spinach. Sometimes I'll add some sauteed mushrooms to it as well. I highly recommend this recipe !

My kids have always loved spinach. I buy a 16 oz. bag of spinach and stir fry it. Add seasonings and cream cheese. Simple and delicious!!!

This is delicious. Makes about 7 1/2 cup servings. Total recipe is about 38 grams of carbs and one half cup serving has approx 5.5 grams. But I didn't calculate net carbs.

Sounds great. I have been using Mark Bittman's recipe (NY Times) which did not require any modification to be low carb.

Using about 1# fresh spinach either boil 1 minute or microwave with just the water left on the leaves after washing, for 1 minute at a time till it wilts. Then squeeze out excess water and chop it. Put 1/2 cup cream in a small to medium pot on medium heat and cook 5 minutes. Add the spinach, 2T butter pinch of nutmeg + salt and pepper to taste. Simmer about 10 minutes till spinach is very soft.

I have also used an immersion blender before the 10 minutes simmering and I like the texture better.

Another great spinach recipe is Arthur Schwartz's Sauteed Spinach w/garlic - although it is pretty self evident. Defrost 10 box of frozen spinach, heat 2 T Olive oil in a small skillet and saute 2 finely chopped garlic cloves till almond colored. Add the defrosted spinach, toss and cook about 3 minutes, season w/salt/pepper.

Both of these recipes (creamed or w/garlic) are great to make eggs in spinach. Arrange the spinach in a buttered baking dish (can be done stove-top as well). Using the back of a spoon (I use a large serving spoon), make as many indentations as you have eggs. Break the eggs into the indentations. Bake uncovered 10 to 12 minutes in a preheated 400 degree oven. Sprinkle with grated cheese and serve. A truly easy and great tasting LC light supper.

If you want to cook it stove top, put the spinach in a small skillet (nonstick is good), make the indentations, put in the eggs, etc, then cook on a low flame, covered, about 15 minutes until eggs are set the way you like them.

I just noticed this is a very old thread, but the recipe is still good. I use the OP's recipe for creamed cabbage also, sans the garlic. It's delish!!

favorite spinach recipes

Mom used to do this many moons ago....
2-3 cups cooked spinach (frozen is fine but drained)
Melt about 3 tbl. butter in skillet, add spinach and 3 chopped hard boiled eggs with a lg. pinch salt (pepper if you wish)
Keep stirring till thoroughly heated thru....we love it.

#2 to make a VERY quick creamed spinach... drain 2 pkg. thawed cooked chopped spinach, add 3 cut up slices of American cheese, pinch salt and about 2 heaping tbls.sour cream. Mix all well and micro about 3 mins. or til all melted . This is really delish.

Thank you so much, Valf, for this recipe. Just made it for our Christmas Eve dinner to go with our standing rib roast. It is SOOOO good!
