Stuffed Artichokes & Pic

I decided to make some stuffed artichokes tonight. They look so cute, all ready to go into the oven, so I thought I'd post the pic

Stuffed Artichokes

1 lb ground meat (beef/veal/pork blend)
2 eggs
1 cup romano
1/2 cup chopped fresh parsley
1 clove minced garlic
salt & pepper
(Or however you like to make your meatballs!)

4 steamed artichokes, thorns clipped and choke removed

1 cup pasta sauce

Put the sauce in the baking dish, and add a few T of water to keep it moist.
Stuff meat in the center and between the leaves of the artichokes
Cover tightly with foil
Bake at 350 for an hour

I make stuffed artichokes all the time by sautéing chopped onion and garlic in butter/ olive oil. Than mix in equal parts of almond flour, crushed pork rinds, and grated parm. Season to taste. Fill previously cooked artichokes and serve. Yummy!

I will try the op's version for a different twist. Sounds so good.

This is a really old thread; she probably just cleaned up her tinypic account in the meantime. Looks like a good recipe, though, and artichokes are on sale at my local store this week - I'm glad it was bumped.
