Pumpkin Nut Scones!

I got this off the Carbquik recipe sticky, and changed the cranberries in the recipe to walnuts.

OMG these are the best!!

Thanks to 4beanz for the recipe!

Here is the original recipe with my tweaks.

Pumpkin Cranberry Scones (Pumpkin Nut Scones)

2 cups Carbquick
1 Tbs butter
2 packets of Splenda (or more if you would like them sweeter, original recipe called for 1 Tbs sugar)
3/4 cup canned pumpkin, cold
1 egg, beaten
1 Tbs heavy cream
1/2 cup fresh cranberries, halved (1/2 cup chopped walnuts or nut of choice)

Heat oven to 425. Cut butter into Carbquick, add the Splenda, pumpkin, egg, and cream. Incorporate the ingredients well, but do not over mix. Gently fold in cranberries. Shape dough into 10 balls, place on a buttered cookie sheet, and press down gently, smoothing the outer edges. Brush tops with additional heavy cream if desired.
Bake on middle rack for 10-15 minutes.

Serve warm with butter and/or whipped cream.

Yield: 10 scones
4 net carbs each
10 fiber

Beeb, these sound great, as I have a few 1 cup bags of pumpkin in my freezer from whenever I open a can (they only sell the large can at the store closest to me) there's always leftovers that I hate to throw away. I, too, will drop the cranberries because of the extra carbs. For my DD I might add a 1/3 cup SF chocolate chips instead of the nuts. Not that I wouldn't want a few chocolate chips myself!

I made these last fall with the cranberries...they were awesome. I just chopped up a few cranberries and put them in the recipe instead of the entire amount the recipe called for. The nuts idea is a great one, though. Maybe you could add some spices to the recipe, too?? Pumpkin pie spice is coming to mind...

This is so funny, I have all morning long been looking at Scone recipes, and bam good ol Beeb, can ya tell me were might ya find fresh cranberries at this time of the year? I looked at Meijers did not find any. Only other stores I have are Krogers or Walmart super center. Any ideas or maybe are you finding them in the freezer section of the store? I luv them cranberries

Mule_Freak, I don't think you can find fresh cranberries this time of year. They are harvested only in the late summer/fall. How about dried or fresh blueberries, cherries, blackberries, rasberries? These may work, just don't add 1/2 cup, maybe just a 1/4 cup.

The nuts worked great. Maybe try that until the fall!!??

Yes I do and now that pumpkin is out again I'll be making them soon. They really are very good, and I love putting a little brown sugar sweetener and cinnamon on top before baking them.

Almond flour and flax work well. Someone on JUDDD just did these this way. She just replace the Carbquik with Almond Flour and she said it came out great. Wish I could find the post for you, but if you ask Joedi on there she will be able to tell you what she did!

I have been making these for a few years! And always sub chopped pecans for the cranberries. They're really good.

These are just too good and sooo easy to make. I made my first batch on Monday. Thurs when I got up at 4 am to get ready for work, they were gone (DH). So i whipped up another batch at 4:30 in the morning. That is how easy and quick they are. DH finished them AGAIN. Made another batch this am and put some crumbled bacon in them. Very good.

To make this for non LC peeps, would I just sub Bisquik?

I think that would work well, even regular flour would do the trick as long as you put some added fat in there like butter/lard/shortening.
