You could use this one with a few modifications:
HOT BACON DRESSING FOR POTATO OR SPINACH SALAD
1/2 lb. bacon
1/2 c. chopped onion
2 tbsp. flour (leave out, or replace with 1/4 tsp. xanthan gum)
2 tbsp. sugar (replace with Splenda)
1 tsp. celery seed
1/2 tsp. salt
1/2 c. vinegar (or part vinegar and part water)
1 c. water
Cook bacon until crisp; drain and crumbled. Cook onion in 1/4 cup reserved bacon fat (or use oil in place of fat) until tender. Blend in flour, sugar, celery seed, salt and dash of pepper. Add vinegar and 1 cup water.
Cook and stir until thickened and bubbly. Can use less vinegar and more water for milder dressing.
Spinach Salad-Hot Bacon Dressing - Low Carbohydrate Atkins Diet Recipe
1 bag fresh baby spinach
1/4 c chopped onion
4 slices bacon
2 hard boiled eggs, chopped
1/4 cup vinegar
1 pkg Splenda
Cook bacon. Remove and drain on paper towel. Slowly add vinegar, pepper and splenda to bacon grease in pan. Stir and heat til boiling. Tear spinach into smaller pieces. Add chopped egg, onion, and crumbled bacon. Pour on hot dressing and toss lightly. Serve immediately.
Serves 2 @ 8 carb, 3 fiber (5 NET carbs), 174 Calories, 11 fat, 12 protein
Spinach Salad with Hot Bacon Dressing

Prep Time: 10 minutes Cook Time: 8 minutes
Yield: 4 servings
5 slices lean bacon, chopped fine
2 tablespoons minced shallot
1/2 cup cider vinegar
1/2 teaspoon sugar (replace with Splenda)
1 teaspoon Dijon mustard
1 tablespoon olive oil
Salt and pepper
1 pound fresh young spinach, coarse stems discarded and leaves washed well and spun dry
In a large skillet, cook bacon over moderate heat, turning it, until it is crisp, transfer it to paper towel lined plate to drain, and discard all but 2 tablespoons of the fat. In the remaining fat, cook the shallot for 1 minute. Add the vinegar, sugar, mustard, oil, and salt and pepper to taste. Bring to a boil, pour over spinach and toss. Serve sprinkled with the bacon.

Don't recall the restaurant, but while on vacation I had a warm spinach salad one evening. It was delicious and very filling. These recipes look great!
