Chicken Parmesan Stuffed Peppers


Had to share.
3 c. shredded mozzarella, divided
1/2 c. freshly grated Parmesan, plus more for serving
3 cloves garlic, minced
1 1/2 c. sf marinara
1 tbsp. freshly chopped parsley, plus more for garnish
pinch of crushed red pepper flakes
kosher salt
Freshly ground black pepper
12 oz. fresh or frozen chicken, cooked according to package instructions and diced
4 bell peppers, halved and seeds removed
1/2 c. low-sodium chicken broth
cook 400 for 45 m top w/ parmesan and mozzerella mix and broil for additional 2-3m.

Realized I didn't post directions
Cut peppers in half length wise and remove seeds
Cook chicken breast and cool-I breaded mine with pork rinds first and cooked for 12 m each side at 400
Cool chicken and cut into small bites. In a mixing bowl mix 1 jar mainara sauce, mozzarella,and Parmesan cheese,spices,and chicken.Scoop into Peppers and place in cake pan.
Add chicken broth to bottom of pan and cover.Cook 50-60min at 400.Liberally sprinkle top of peppers with mozzarella and broil 2 minutes.

This does look tasty, and a good recipe for left-over rotisserie chicken. I would like to try stuffing Cubanelle or charred Poblano peppers.
