No it's not on here untill now, here ya go.
Brownies 2 oz. unsweetened chocolate melted 1/4 c. cocoa powder 4 eggs 1/4 c. E,or X or truvia 1/4 tsp. stevia 1/4 c. chocolate chips to put on top (optional) I put nuts in, not everybody can use nuts . Mix everything up well then pour into a loaf pan I used 8x4.5 loaf pan. Bake @ 350 for 15 to 25 minutes , depending on size of pan. ------------------------------------------------------------- MMorris butterfinger cookie is on LCF board somewhere. If you want it I can find it. --------------------------------------------------------------- Bacon bars is just 3 slices of bacon crumbled and then put them in your candy containers and pour chocolate candy on top. ------------------------------------------------------------- Raspberry bonbons are 3 T. of my sugar-free raspberry jams . You pour the chocolate in your molds then some raspberry jam then more chocolate. Freeze . There is a few of them. I love them. ![]()

Yum! Thank you so much Esther. I love the other ideas you listed, too.
I think I'm eating too many LC sweets lately because everything looks so good! :-) Quote:

What foods will you gals prepare for Thanksgiving so that you're not tempted to eat foods you are sensitive to?
I'm learning that I have to prepare ahead of time if I don't want to end up in pain from eating foods I can't tolerate. And it needs to be SPECIAL foods that I really love, otherwise I'll be tempted to go off plan. |

Hi Esther,
Will you make your LC stuffing? Remember we made that last year? Are yams or sweet potatoes lower in carbs? I'd like to make those. And some LC sugar free cranberries. Maybe I'll make Kevinpa's pie crust and make either an apple or berry pie for something special. I LOVE my low carb chocolate ice cream made from coconut milk but it doesn't go well with pies. Do you have a really good vanilla coconut milk ice cream recipe? Now to find a good veggie or salad recipe. There must be something out there that is wonderful that doesn't have dairy in it. :-) Quote:

I'm making cranberry and orange zest . Search online for a vanilla coconut milk ice cream. I'm making a chayote ( cook into apples), craberries and squash casserole. Bacon , onion and my canned green beans. Yesterday my sister and I made coconut flour cheddar ( nutritional yeast) biscuits. They were awesome.

Do you slice the chayote in chunks? And what kind of squash would you use. Did you have a recipe or do you wing it? It sounds AWESOME! Yummo!
I like all your other ideas, too! You're getting my mind going on what I can make. Yum! Thanks so much! I wish I could make the biscuits but I'm not supposed to have yeast. ![]() Quote:

I have been missing yogurt. I tried to make coconut milk yogurt and my failure was documented near the beginning of this thread. I buy So Delicious plain yogurt and it is just OK, but is runny and usually low fat.
This morning I took some coconut cream (the solid part when you refrigerate the can) and mixed it about 50-50 with CM yogurt, 3-4 big frozen strawberries and some vanilla Monin in my Nutribullet. It was creamy and yummy and gave me the yogurt "tang" I had been missing.

I'm not using a crust.
Pumpkin pie 1- 15 oz. can pumpkin 2 eggs 1 c. coconut milk( I use organic) 1 T. gelatin 2 T. brown sugar sub ( whatever you use for brown sugar) 1 c. sweetner ( your choice, also taste to see if sweet enough. I used ezsweetz) Put pumpkin, sweetners in a large bowl , mix well. Add gelatin to coconut milk and let dissolve in a small bowl. Add 1 egg at a time mix well after each egg to the large bowl with pumpkin. Now pour your milk & gelatin in with the pumpkin mix throughly. Now pour into casserole dish or pie pan and bake for 45 to 55 mins. in oven at 350 degrees. Enjoy

Esther,
How do you replace cream soups in a recipe? I have a broccoli casserole that my husband would like for Thanksgiving but it has cream of mushroom soup. I can't eat the dairy in the soup. Is there a way to replace it with something that tastes the same? |

I use canned coconut milk to make "cream of" soups. I've not tried using them in recipes like you do canned soups.

Thanks, Ladies! That helps a lot!
I made Esther's Almond Meal crackers. They are tasty. 3/4-1 c. almond flour (I used sunflower seed flour) 4 tsp. Erythritol 1 egg white less than a 1/2 tsp. salt 1/8 tsp. garlic powder 1/8 tsp. onion powder Mix together and then divide into 20-24 small balls. Place on a cookie sheet with parchment paper. Put a piece of Seran wrap over a small can to flatten and then peel off Seran wrap. Bake at 325 for 15-20 minutes. Watch closely the last 5 minutes. Edges should be brown, center will be light colored. I've read that you can freeze these. |

Esther,
How long does your yogurt last in the fridge? Do you keep the entire batch in the fridge or do you put some in the freezer? Hugs, Grammy |

I tried a couple of different starters, I think the temperature may have been the problem. I tried a couple of different batches, and they all went in the yogurt maker.

What kind of starter? Are you using gelatin? I use cashew milk & canned coconut milk. My starter is gelatin & dairy free probiotics. You can use all canned coconut milk (2 cans) if you want.d/f probiotics are very important. Please use no sugar, this is not bread. No regular probiotics they have to be dairy free. There are many kinds. I use Solarray or Jarrow capsules because I can't afford the others. I have pics that show solid yogurt. Would you like me to put up pictures. I also use it for sour cream and I freeze some for ice cream. Gina I hope I'm helping.

Please don't use the carton coconut milk it will not set. I used 6 Solarray capsules
3 billion dairy free probiotics . Now I use 2 capsules , Jarrow 10 billion per capsule. I think thats all.

Do you use a yogurt maker or one of the other methods?
Maybe my yogurt maker was defective and didn't get warm enough (or got too warm).
