I love this "staple recipe" casserole. Did it with pasta for years; now with cauliflower. I love to add a tiny jar of drained pimiento to it. Mmmm.

This looks delish! I also rec adding a heaping spoonful of some good dijon mustard. I used to add this to my old ham and potato casserole and it really packs a flavor punch! ::Adding to next week's menu::

I use whatever I have in my house at the time I make it. But mostly I use mild shredded because that is what I always have. But very tasty with sharp or even extra sharp. I love cheese and thankfully my family does too

I made this tonight. It was pretty good.
My two middle girls loved it.
My oldest (who hates cauliflower but didn't know what was in it.) didn't like it.
My youngest (Who is adopted and has food/texture issues) ate it without complaint because it is our rule that you do not have to like it, you just have to eat it. But she gagged several times so I know the texture really bothered her. I will not serve this to her again. Lol. But I will make it "for me" and share with those who liked it.

This is a great recipe and I sauteed a shallot first. To keep the calorie count down slightly, I used 3/4 cup of heavy cream and 3/4 cup chicken broth, no eggs and about 1 tsp of the Dixie Diners Thicken Up. The texture was great.

I love a "crust" so mixed together about 3 Tbsp. each of grated Parmesan, whole wheat Panko and almond meal with 1 Tbsp. olive oil. I know the Panko is bread crumbs but with only 1/3 of the topping bread crumbs and whole wheat, I did not think it would be too much to worry about as this serves at least 4, if not more.

Thanks goodness the weather is cooling off as this is a perfect dish for Fall.

I made this tonight- used some sausage and some hamburger, because that's what I had to use up. I made the cheese sauce separately- melted together several kinds of cheese with a splash of milk (Velveeta, parm and grueyerre, again because that's what I had), seasoned it with Worchestire, salt, pepper and dry mustard. I tempered the egg first, then stirred it in to the sauce. Smooth like butter!

Absolutely amazing. So delicious- plenty for leftovers tomorrow too! My whole family gobbled it up, and this mommy LOVES when her boys eat lots of veggies.
