Just made this again for a luncheon, and my friends went nuts. Number one favorite quiche recipe, and that's saying something. Make it, you won't regret it! Plus, I subbed a bunch of different ingredients, it doesn't matter. 100% delicious.

Bumping this for any poor souls who have never seen this recipe. I made it for breakfasts this week, and as always, it is SO delish. I used chopped up turkey bacon for the protein, stirred in about a tbs of diced chile peppers in adobo, and used a really great asiago for the cheese this time. I agree with one of Charski's notes up thread- this recipe sings with a good strong flavored cheese. Yum!

Thanks Char. The quiche sounds delicious, but I was wondering where in my little corner of Spain I would find that very exotic sounding smoked cheese. Idiazabal is in every supermarket .

I'm sending this to the top again because I'm gonna make it tonight to take up to my Dad's house tomorrow - my sister is staying there a few nights and she and I are gonna do "sister brunch" tomorrow. This is easy and really good, and as picky as she is, I know she'll love it.

Thanks for bumping, Char! It's brandy-new to me, and it looks awesome! For the cheese, I was thinking an easier type to find might be smoked Gouda. Or for a non-smoked but flavorful sub, Fontina would work. As you indicated, pretty much most possible subs, or even a combo, will work with this. Looking forward to enjoying it soon.

Cat, it's the only one my DH will eat. It's so rich and not watery (unless you put a bunch of uncooked veggies in it) and yes, any cheese will do!
