Anyone know any good low carb Pasta recipes?

I know this sounds a bit hard to manage since pasta is very carb heavy but it's truly my one weakness. I could eat pasta 3 times a day and be happy and i'm really missing it in my routine. Anyone know any decent substitutes?

Some options:
  • I slice cabbage into noodles about the width of fettuccine noodles when I make a cabbage Alfredo. Wonderful with poached eggs on top.
  • A cream cheese and egg mixture can be used to make noodles. Basically cream cheese pancakes made as thin crepes, then cut into noodles.
  • There are "miracle noodles" (i.e shirataki), but most people get put off by their smell.
  • I use riced cauliflower as a base in a lot of dishes where I might have used pasta before.
  • Spaghetti squash
  • Spiralized vegetables (e.g. "Zoodles")

There are some low carb pastas available at netrition and other sites.

I like fettucine by Carb Nada...it tastes great. I found on amazon.

It's 34 carbs but if you do net carbs by subtracting the fiber, it is 17 carbs per serving

Depending on how many carbs you allow, there are several others on the netrition site....if you clik on the product, then there is a nutrition button you can use to find out the carb counts

You can also make vegetable noodles using squash, etc. with your potato peeler if you don't have a spiralizer or a mandolin. For the mandolin, I just slice the squash or other veggie very thinly with that and then cut them into slices with a knife.

I agree, Carb Nada is my favorite too, and it's affordable. It has 8.5 carbs per oz; normal pasta has about 20.

Another favorite brand that you can get at Amazon, and maybe your grocery store "health section" is Fiber Gourmet, also affordable and 12 carbs / oz.

What I like to do is to use about 1/2 the amount of pasta a recipe calls for, and the last 2 minutes it is boiling, add a spiralized zucchini. Zoodles have a nice slippery feel, much like pasta; I think they mix well.

I also want to give a vote in favor of Oat Fiber Shiritake noodles, I use them a LOT, especially in stir frys and Asian dishes, like Pad Thai - in those cases, I can hardly tell the difference. I like the Oat Fiber variety because they require very little prep: I put them in a strainer and run very hot water over them, "massaging" them for about a minute. That removes the fishy smell, and they're ready to throw into your casserole, or whatever.

One last trick is in some of my favorite casseroles that call for pasta, I've subbed in chopped up cauliflower, and don't miss the pasta at all.

Part of the fun of LC, is finding good work-arounds

I saw a very simple recipe on Facebook: I haven't tried it, so I can't vouch for it.
1 cup of mozzarella, melted, stir in 1 egg yolk. It goes thick. Press onto a metal tray, between sheets of parchment paper, press down thin, chill, then cut into thin strips, and drop into boiling water for a few minutes. Top with sauce.

I've tried this and it isn't bad. The trick for me is getting it thin enough before I cut it.

I use this recipe for Mac and Cheese. I need to play around with it some more to get a boil and eat pasta that I like.

Also, occasionally, I have the Birds Eye Zucchini/Lentil pasta. Its not super low carb, but its a decent sub at much lower carbs. 1 and 1/4 cup = 20 net carbs

Buttoni has a lc lasagna noodle that is really good, can't find the thread. Maybe someone who has luck doing searches here can find it.
