I saw those! And they look so good. But I lack the buttermilk to try them. BUT I'M GOING TO as soon as I can get some! Recipe's on the kitchen counter on the top of my "Try These Next" stack.

Got to go out of town tomorrow, so it'll be a few days before I can get to the store and try them.

Microwave Brownie

I was messing around with a few recipes and accidently came up with this awesome brownie!



Ingredients:

53g egg whites
2 tbsp Splenda/Swerve or sweetener or choice
1 full dropper of Vanilla Stevia
1 tsp baking powder
10g Pea Protein
5g Pea Fibre - will replace with Oat Fiber 500 next time.
2 tbsp Oat Fiber 500
2-3 tbsp cocoa powder
2 tbsp unsweetened almond milk - will omit and replace with water next time.
3+ tbsp water (enough to make a thick smooth batter)
1/4 - 1/2 tsp Konjac Glucomannan Powder
1/2 tsp Vanilla Extract
1/4 tsp Chocolate Extract

I think that if I use SF Chocolate Da Vinci or Torani syrup I can cut back 1 tbsp of cocoa and Swerve and still get a rich chocolatey taste but also reduce the carbs. The Pea Fibre has more carbs and less fibre than the Oat Fiber 500, which is why I'm going to try subbing it out. Will try it tonight and see how it turns out.

Instructions:

In a bowl mix together the dry ingredients. Add wet to dry. Put in greased/sprayed microwave safe container - I use a large pyrex measuring cup to cook it in.

Nuke for 3+ minutes (in 1 minute then 30 second increments.) Once the top is dry and the bottom doesn't look too wet, turn it out onto a plate to dry/set. The bottom of the baking vessel should have very little to no residue left if cooked completely.

After about an hour it will be nice and dense just like a brownie.

Beautiful dessert recipes!!

I am sure that someone has tweaked the oopsie recipe to make it savory but thought I would share mine. I call them rolls btw....

standard oopsie recipe without the splenda and the additions of the following to the yolk mixture...

1 tbsp coconut flour
.5 tsp. onion powder
.25 tsp. pepper
1 tsp. garlic powder
1 tbsp. bacon fat

Prepare as normal but just before baking add 1 tbsp. each of dried onion and grated parmesan to the top (spread over 6). Cook as normal.

Mmm. They sounds delish, and LOOK amazing, Cathy! I use them for garlic bread once in awhile, but mine don't usually look as pretty as yours there.

Thanks Peggy, it was tasty!!

I told my DD I would make a chicken and broccoli pizza using the cheese round recipe for dinner tomorrow. I plan on patting the dough onto a cookie sheet, baking it then put the toppings on it and bake until the cheese is melted. It makes a great pizza crust.

Taco night!! We love tacos and I wanted a crispy shell so I made one with cheese. I just spread it out on a plate and microwaved until brown a crunchy. It was really good and stayed together until the end.

Thanks, it just wouldn't seem like a taco without the cheese but I didn't add nearly as much as usual. I do love cheese though!

It is, I used the shredded cheddar and just sprinkled it on a plate and spread it out but made sure that none of the plate showed through the cheese. Stuck it in my micro and set it for about 3 minutes or so, kept an eye on it. When it started to brown around the edges I took it out and used a metal pie server and went all the way arriving the bottom of the cheese and lifted it up so it wouldn't stick then put it back in the micro for at 1 minute increments until it was browned all the way. I took it our after every minute or two and used the pie server to loosen the cheese all over so it didn't stick to the plate. If it came apart I would just push the cheese back together so there were no holes in it.

I was really happy with it. It was quite a bit of work but I only could eat one. I used an 8" plate and filled it almost to the edge so it was a good sized shell, probably the same size as a regular shell.

Quesadilla

Not the best picture but it sure tasted yummy!

Oat Fiber and Psyllium Husk tortilla filled with chili seasoned ground turkey and cheese. I added a bit of salsa and greek yogurt to top it off.

I'm on set today so I've only got my phone with me. I'll post the recipe when I get home. It's pretty much just oat fibre, psyllium husk, egg white, spices and this time I added a little flax.
