Strawberry Oat Bars
I made some bars today that have oats in them, but I backed way down on the amount and subbed some chopped walnuts and flax for some of it. They turned out pretty good - a wee bit soft, but tasted great!
Strawberry Oat Bars (loosely based on A Taste of Home's recipe)
(makes 16 servings)
Base and Topping:
1/3 cup packed Sukrin Gold
1 T brown Truvia ** you can use all Sukrin Gold
½ cup old fashioned rolled oats
2 T flaxseed
¼ cup finely chopped walnuts
¼ cup Carbalose flour
1 ½ T Spelt flour
¼ cup almond flour
¼ tsp salt
½ tsp baking powder
6 T butter
¼ cup flaked unsweetened coconut
2/3 cup sugar free strawberry preserves
Preheat oven to 350°F. Line an 8x8 baking dish with parchment paper. Set aside.
In a medium bowl, combine dry ingredients, except coconut. Add butter and mix until crumbly and butter is incorporated using a pastry cutter or your fingertips.
Pour half the mixture into the baking dish and press it down firmly. Set aside while preparing the filling.
Spread preserves over the oat mixture layer, making sure it is entirely covered. Add coconut to remaining oat mixture. Sprinkle evenly on top of preserves, pressing lightly with your hands.
Bake for 30 to 40 minutes or until light brown. Cool completely before cutting into squares.
Only 3.12 net carbs per bar

bumping for Susie...........I wonder if adding a bit of chia to the base makes for a firmer bar but then again you said it firms once refrigerated. So instead of a bar, I see it as a cobbler......yum, nabbed the recipe as strawberry season is approaching. I'm thinking instead of the preserves, using fresh strawberries w/ my sweetner of choice and a bit of oat fiber to soak up the juices.
