L: air fryer "naked" chicken tenders; cucumber and tomato salad
D: turkey breast, gluten free gravy on a mug muffin (open face sandwich); mashed cauliflower and green beans

Couple of hard boiled eggs w/mayonnaise if I get hungry

I got sick over the weekend (chest cold?) But still have an appetite

B - sf/lc tea latte and then a premier caramel protein shake with salted caramel iced tea

L - 2 cheese shell tacos

D - spaghetti squash with Italian sausage, rao (low carb) marinara and Italian cheese blend on top

S - sf gelatin with home made whipped cream on top

Barbo's Instant Pot Corned Beef Dinner

Barbo's Instant Pot Corned Beef Dinner
4 lb. corned beef with spice packet
4 c. water
1/2 large cabbage quartered
Carrots as many as u want, peeled
2 large potatoes cut into 1/3 or your choice (maintenance)
4-6 fresh garlic cloves (I like frozen from Israel "Doret" Trader Joe's.
Black pepper as desired
Butter for veggies at serving time.

Place rack into Instant Pot, lay in corned beef, sprinkle with
spice packet and add the garlic and black pepper.
Turn on to manual and cook on high pressure for 70 minutes.
Take pressure off at once. Remove corned beef to cool.
Pour out the juices into a container
Slice into beautiful slices. Lay in dish with cover and pour some
of the liquid over the slices. Cover and set aside.

Place veggies on rack, pour juices over veggies.
Manual for 4 minutes. Remove pressure at once.
That's it. Everything was beautiful and we melted butter
over the veggies. I made a thousand island dressing for me
and mustard for Jay.

Note: I timed how long it took Instant Pot to come to pressure.
it was 15 minutes.

Place veggies on rack, you still have loads of juice in the pot

Lay cabbage, potatoes and carrots into cooker. Turn to manual
and cook for 4 minutes. Pressure off at once.

2 fried eggs and an avocado
2 bunless reuben dogs (2 hotdogs topped with sauerkraut, onions, mustard and cheese, quick steam to melt the cheese)
Mixed greens topped with leftover roasted veg, grated cheddar and warmed leftover sliced ribeye steak dressed in a simple homemade dijon vinaigrette.
