Low-Carb Rueben Sandwich Casserole

allright - i wish I'd have taken a picture - but we were too hungry! lol
So I bought a casserole magazine (not low carb) and tried to find what I could MAKE low-carb...

my first attempt was the Rueben Sandwich Casserole and OMG sooooo good!
Recipe - as written - called for:

1 lb sliced corned beef
14 oz sauerkraut
1 cup 1000 island dressing
shredded swiss cheese
4 slices rye bread (buttered)

mix the 1000 island dressing and the sauerkraut in a bowl.
place this mixture in the sprayed casserole dish - layer the sliced corned beef on top of the sauerkraut
layer the shredded swiss on top of that
place the 4 slices of rye bread, buttered side up on top and bake at 375 for 30 minutes

and the way I made it low carb - first the dressing...I made my own from this recipe:
1/2 cup mayonnaise
2 tablespoons ketchup (used low-carb ketchup)
1 tablespoon white vinegar
2 teaspoons sugar (used splenda)
2 teaspoons pickle relish
1 teaspoon finely minced white onion
1/8 teaspoon salt
dash of black pepper

1. Combine all of the ingredients in a small bowl. Stir well.

2. Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the sugar dissolves and the flavors blend.

Makes about 3/4 cup. (this was more'n enough even though the recipe called for 1 cup).

And for the bread I used trader joe's low-carb bread (7 g carbs and 4 g fiber per slice)

voila! it was soooooooooooo freakin' yummy!

I do something silicmar I juat add carraway seeds and no bread, The next time I go to Winco tho I am going to buy some bulk rye flour to try sprinkling in the bottom

Wow, sounds amazing!! Thanks, will be trying this one soon, maybe with leftover corned beef from St. Paddy's Day!

I could not find the low carb bread at Trader Joe's, only the low calorie. It has 11 carbs with 5 fiber. Wish I could find the one you are talking about!!

This sounds delicious, but I've never seen LC rye bread... We don't have a Trader Joe's around here either.

Maybe I'll look around though, I love Ruebens so much...

Last year I made something along the same lines, but as a quiche. no thousand island & I added carraway seeds. delish!

I don't have exact sorry, but the concept is pretty simple

I slow cooked a corned beef brisket and then shredded it, added sauerkraut, shredded swiss, caraway, 8 eggs, 1 block cream cheese, pepper to taste. mixed it all up and baked it.

I'll look around for the recipe......
