Today at the meat counter......

I asked them if unlike the tri-tip roasts in the case with all the fat trimmed off, they might have one with all the fat still on it? He looked at me like and said, so you want a tri-tip with all the fat on it.....yep......want me to trim it at all?.......nope......,are you sure, ma'am yep!

I just walked away laughing...I turned around and he was still staring at me.....most likely thinking.....no wonder she's so fat.....eating all that dang fat

I get looks when I do that too, except they are probably thinking, "No fair, she gets to eat whatever she wants"

I tried to do this too, recently with a pork roast and the butcher told me he now gets the meat already trimmed! He sympathized with me though. He likes his meat fattier as well.

If you are wanting fattier pork roasts, get the cheap pork butt and pork shoulder roasts. Very fatty, which makes them super moist and juicy and tender and yummy. I have a whole bunch of those roasts in my freezer right now. They're really cheap cuts of pork, so healthy for your grocery bill too.

I went to a very old fashion butcher a few years ago for a tri tip to smoke on primo smoker. You can not get tri tips around here in the meat case (Syracuse), because everything is precut, they just stock the case it seems. This butcher in Ogdensburg literally has a few head of cattle out back. He did not have a tri tip ready to go, and told me to wait a few minutes. I half expected to hear a "Here Bessy, come here!" and a bang!
But he had a whole side of beef hanging in the cooler, and like a surgeon, cut out what I wanted. Pretty neat. Wish he was closer. I was just in the area for business.
He said most tri tips wind up in our ground beef.
