Super good oat fiber monkey bread!

Have any of you tried the super low carb oat fiber based monkey bread from she calls me hobbit? Ah-maze-ing!

Here's the sweeteners I used and my slight modifications that I put in the comments section:

Wow I sure thought it looked like too much butter going into the oven! Nope!

I used vanilla whey powder and 4 pkt Truvia in the dough, 8 pkts Truvia in the cinnamon mix and 15 drops EZ-Sweetz + 10 drops vanilla stevia in the butter. I also used 30 drops of LorAnn butterscotch flavoring instead of maple- it gives things a good bakery flavor. Because I didn’t use granular sweetener in the butter, I was able to just melt it in the microwave too.

Took 20 minutes to cook in a ceramic heart cake pan, one layer of balls. The dough balls hardly touched in places but grew amazingly as it baked. It didn’t make 12 servings- haha. More like 5!

Thanks for missing me! I am SO BUSY with my teaching job- it's ridiculous! I miss you guys too.

Still keeping on with low carb/keto though! I'm sure I'll be more active again in the summer. Right now we are eating a lot of known easy recipes and convenience foods like frozen wings and bagged frozen cauli-rice. Boring, but I am too tired to care much. I just bought a case of RTG protein shakes- and that's just not like me!!

This monkey bread is JUST AS AWESOME gently warmed in the microwave 2 days later. Amazing that you can make bread from mostly oat fiber!

Thank you! I've been experimenting more with oat fiber and I'm really pleased with how it performs in recipes! I'm definitely going to give it a go, he has some oat fiber cookies that I made once and they came out pretty good with a few tweaks.

I think the next time I make this- which will be very soon! - I will make up the pan, cover it with wrap, and stick it in the fridge overnight. It might get even more rise and might develop even more of a yeast flavor.

I made this today, wasn't a fan, too dry. maybe it was because I used all almond flour and none of the flax. Anyways, I could also taste the PP too much too. It looked pretty and smelled nice . Sorry, I feel feedback is a good thing, we each have different taste.

BTW, I did let it rise for 30 minutes

Debbie, what was the texture like? Did the oat fiber give it that kind of chalky texture that it has sometimes in recipes?

I will try a small batch of it I think.

No, definitely not a chalky texture. Mine was incredibly moist with a coarse texture... like corn bread (but not the flavor). Then it was like it had been dipped in a cinnamon donut glaze.

I have a feeling brand names would play a huge part here. I use LifeSource oat fiber, Designer Whey vanilla praline PP (my magic baking PP ), Bob's Red Mill GOLDEN flax and Honeyville almond flour.

Make sure to use ALL the butter called for.

Thanks Jen. I have actually switched from NuNaturals oat fiber to Lifesource because according to reviews, the latter is closer to flour in consistency. NN oat fiber could be incredibly chalky if you used too much of it.

I used lifesource oatfiber and the now brand unsweet protein powder. It was chalky and dry. It had a cornbread mouth feel, not bread like real monkey bread has. I threw it out. Sorry didn't care for it.
