Banana Waffles with Browned Butter Bananas Foster syrup



No flambe! No actual bananas! This is amazingly good! It's quite sweet though- just how I like it but the syrup may need to be toned down for others. My husband liked pecan pieces baked into his waffle best and whipped cream on top. Warm pecans sprinkled on top were his 2nd choice. I preferred no pecans at all and no whipped cream.

Cool Note: the way this syrup cools and dries indicates it would make an *excellent* bundt cake icing... maybe even a cookie icing.

Browned Butter Bananas Foster Syrup (& Icing)

1 stick salted butter
1/2 cup Swerve or Confectioner's Swerve
1/3 cup heavy cream
12 drops EZ-Sweetz (stevia drops would also work well)
2 T SF praline DaVinci syrup (or banana or vanilla)
1/2 t banana extract

In a saucepan, carefully brown the butter while whisking constantly. The goal is brown flecks in it- watch it at the end because it turns brown (and black! ) quickly! Right away, whisk in the Swerve, heavy cream, EZ-Sweetz and syrup. Let simmer over medium-low heat, stirring often, for exactly 5 minutes and then remove from heat and stir in the extract. The sauce will thicken a bit as it cools. Rewarm slightly and stir well before serving.

Low carb Banana Waffles (modified from BettyR's Amazing Waffles on this site)

Preheat your waffle iron.

1 8 oz. package 1/3 less fat cream cheese, cubed
3 eggs
2 pkt Truvia
1 tsp. baking powder
3/4 tsp. baking soda
1/4 cup vital wheat gluten
1/2 cup ChocoRite banana protein powder (or vanilla PP + 1/2 t banana extract)
2 T heavy cream
1/2 t vanilla
1/4 cup SF Banana DaVinci syrup (you could use 1/2 t banana extract AND either praline or vanilla sf syrup)
1 cup shredded Mozzarella cheese (you don't taste it!)
1 t cider vinegar

Put all ingredients into a food processor; process until smooth. Open processor and scrape down the sides with a spatula, then process another 60 seconds. The batter will be very thick. Don't thin it out. Waffles cook much quicker than standard waffles! Makes 5 1/4 large round waffles (the kind with 4 sections to each).

Pretty much what my husband said right before his first bite. And then he melted into the kitchen floor with a crazy grin on his face.

This low carb is so hard.

Oddly enough... it was rather easy. The browning of the butter is the only tricky part. And once you've successfully done that, it's no big deal.


My husband just said the syrup would make excellent ice cream topping. Huh. I wonder what consistency it'd have on something frozen. I don't think it'd harden as much as a coconut oil based chocolate shell... but it just might turn almost caramel-ly.

Dang. Now I have to make more.

Maybe if you added a little coconut oil to the syrup, you could get that little bit of hardening on ice cream.

I did think of that Soobee... though it's the browned butter that makes it so yummilicious! Still, I think it'd be quite easy to add a Tablespoon to it at the end with little or no flavor change.

But... without it it might turn caramelly or praline-y textured. Which would be cool too!

Maybe you could try using half butter and half coconut oil but still brown the butter. That way you would still get the browned butter flavor, it just wouldn't as strong.

Leftover syrup spooned into a bag hardens into a frosting consistency... and happens to be excellent piped onto walnut halves. Like mini pies.
