I did it! I made candy bar nougat- and Payday bars!!

These are amazingly addictive.





Low Carb Candy Bar Nougat
Makes about 24 cookie sized servings

1/2 pkg (1/2 cup mix) LC Foods Marshmallow Fluff- prepared as directed into 2 cups fluff
1 cup Confectioner's Swerve
1/4 cup peanut or almond butter
3 scoops Designer Whey Vanilla Praline protein powder
3 T oat fiber
1/4 t guar or xanthan gum

Mix all ingredients together and make 24 blobs on parchment paper. Let stand 30 minutes dry out. Peel blobs off of paper and flip over. Let rest 10 more minutes or until they are dry enough to shape into patties or logs by hand. They are ready to eat as marshmallowy (but denser) chewy candy.

Pecan patties: Press pecans into patties and chill.

Peanut Logs (aka Payday candy bars) Dip logs into sugar free caramel sauce and roll in peanuts. Chill.


The sf caramel sauce I am still working on- what I made worked but turned into praline candy quickly (you can see it looks brittle under the peanuts), so I'll work on it.

By the way, I asked the company how many grams of erythritol are in the flavored Designer Whey protein powders and the answer was 3... making them 3 net carbs per scoop, not the 6 listed.

I can imagine all sorts of flavored marshmallowy chewy candy- like peanut butter, strawberry, white chocolate or chocolate. Then they can be made into balls and dipped in melted chocolate for fancy Whitman type chocolates. This recipe would make a TON of them... I can see it being a birthday or Valentine present with a pretty box and some mini cupcake papers. <3

JHoberer, this looks terrific. Do you have tagatose? I just made Carolyn's Cashew Turtle Ice Cream Pie. For the caramel layer, I used half tagatose and half erythritol. Honestly, I can't taste the difference between this recipe and the high carb version. Even though tagatose is very expensive, I usually only use 1/4 cup at a time.

I have not played with tagatose. I don't know if I will, it is full sugar isn't it? I've heard it makes great chewy cookies though. Never say never though, so many people are putting a spoonful of oat flour in things that I finally have that in my Netrition cart.

Someone pointed out to me that the LC Foods' Marshmallow Fluff mix says 2 g sugar per serving while being 2 total carbs and 2 fiber... not possible, right? It looks like a typo on the Netrition product page. My actual bag says 0 grams sugar and the ingredients seem to reflect that. I already emailed them about it.

This ought to be 8 net carbs for the peanut butter and 9 net carbs for the protein powder... making the entire batch 17 net carbs and a 1/24th serving (which isn't small considering it is candy!) about 0.7 net carbs each. Plus the carbs in the nuts or any kind of caramel sauce if you use those. Call me out on that if you see differently!
