Royal Icing.....have you made it?

I've made it with powdered malitol before, worked terrifically, just like the real stuff but I haven't bought malitol since I ran out, use other sweetners.
Has anyone made a royal icing with another sweetner? I do want it to set up but I don't care if it has a grainy texture.

Low Carb Lemon Royal Icing
my invention, Oct 2014

5 T Confectioner's Swerve
2 tsp NOW egg white protein powder
2 T lemon juice (2 carbs)
a couple drops vanilla

Mix together in a small bowl. Immediately spoon onto cooled cookies and spread evenly with back of spoon. Allow to dry and harden.

Mmm, sounds good, Jen...What would be an equivalent sweetener amount for Swerve? I have Truvia, Ez Sweetz, and Erythritol.

Powder the Erythritol in the food processor for awhile, the powdered sugar consistency matters here. Or buy Sensato powdered erythritol.

Try 5 T powdered erythritol plus a few drops of EZ-Sweetz. Swerve = Sugar cup for cup but erythritol has 70% the sweetness of sugar.

I made a glaze for my Flourless Lemon Cake the other day, using the Sensato powdered erythritol along with some NuNaturals NuStevia No Carbs powder and a "measures like sugar" stevia-based sweetener, forget the name at the moment but comes in a green bag. Also used lemon juice and lemon extract, and just enough half & half to get the consistency I wanted.

It was good and I liked the consistency, but even with the combo of sweeteners, the cooling effect was profound. I probably will stick with cream cheese as the base from now on, sweeten with the NuNaturals and maybe some liquid Splenda, then thin out as needed.

KevinPa had a recipe for Isomalt powdered sugar you might try.

"Isomalt is ideal in any recipe where powdered sugar could be used."

"Isomalt + little bit of splenda + little bit of xanthan gum = perfect powdered sugar"

"Maltitol works in powdered sugar, but isomalt is generally less laxating, less carby and less blood sugar impact. Erythritol has the right texture for powdered sugar but it's too cooling in it's undissolved form."

I was just re-reading this post and realized my previous post sounds a little dismissive. I must apologize to you JH as I did not mean it that way.
I'd really like to try your Royal icing. Did you notice a cooling effect with the Swerve?
I do have the powdered, but I also have xylitol and erythritol.
I do appreciate your hard work in the kitchen that brings us your wonderful recipes!

I don't recall how much of a cooling effect this had. It wasn't too bad though because my husband ate them and didn't complain. He is more sensitive to it than me. Swerve is much better than straight erythritol for it though. I don't use xylitol.

Some new instructions, etc.

Low Carb Lemon Royal Icing

5 T Confectioner's Swerve
2 tsp NOW egg white protein powder
2 T lemon juice (2 carbs)
a couple drops vanilla (will be creamy color) or clear vanilla

Mix together Swerve and protein powder in a small bowl. Add liquid ingredients and mix well. Bang on table to loosen air bubbles. Immediately spoon onto cooled cookies and spread evenly with back of spoon. Pop any air bubbles with a toothpick immediately. Allow to dry and harden. Ices nine 2 3/4 inch cookies.

Note: Two drops of orange extract is a great addition for gingersnap cookies. Also, a drop of yellow food coloring could be added... or any color.

Royal icings require an acid to activate the egg whites and solidify. I am *guessing* this recipe would also work by substituting a pinch of cream of tartar for the lemon juice if a lemon flavor is not desired... like for chocolate cookies. Use a flavored sf syrup to account for the 2 T liquid (like clear vanilla DaVinci or Torani). I'll try it some day... but maybe one of you guys will beat me to it.

I used regular vanilla for the creamy color...


I got an airbrush for my birthday so I'm going to try my hand at airbrushing a fall leaf on each cookie tomorrow. Wish me luck!
