Perfect Sweet N Sour Sauce

Had it over deep-fried battered shrimp tonight but would be excellent with chicken nuggets like my daughter likes or grilled chicken strips.

Low Carb Sweet and Sour Sauce
Makes roughly 2 cups
Absolutely nailed it.

Mix together in small bowl:
1/2 t powdered ginger
1/2 t onion powder
1 T red bell pepper powder (or 2 T finely grated fresh and add it to the liquids)
2 t glucomannan (not any more!)

Bring to a boil in a medium sauce pan:
1 1/2 cups sf pineapple DaVinci syrup
3 T cup bourbon (or water)
4 T rice vinegar
1 1/2 T soy sauce
1/2 t molasses

Slowly add the dry mixture to the boiling liquids while continuously whisking. Cook until thickened, about a minute. Thickens more as it sits and cools. Thin by whisking in a bit of water, if needed.

A little molasses makes it taste like brown sugar was added. I do it all the time in cookies. I think it's worth the carbs for the flavor. YMMV

Yes, 1/2 a tsp of molasses adds a huge amount of flavor. Skip it if you don't want it in there. For the record though- a Tablespoon is only 13 carbs. This is 1/6 of that- or slightly more than 2 carbs- for an entire 2 cup recipe, which fed my family of 5 twice. So the molasses is adding about .2-.3 of a single carb to my meal. I can live with that.

This sounds great Jen! I've been looking for ways to get an "authentic" tasting sweet and sour sauce. Now, I have to work on low carb breaded chicken balls. I miss those soooooo much!

Yes, mix about 3/4 tsp or so of either guar gum or xanthan gum in with the dry ingredients. At the end, you might need to sprinkle and stir in more if it isn't thick enough still. Be careful to use it from an old spice canister or sifter because it will clump otherwise. You might get a cloudy sweet and sour sauce instead of clear but it ought to taste the same.

Let us know if you try it this way so we can adjust the initial amount of guar or xanthan.

In a ziploc bag inside a freezer ziploc bag- this freezes perfectly! I just thawed in a bowl of hot water.

Once you use glucomannan powder for thickening, you will never go back to the gums. The mouth feel is just like cornstarch. You only need a tiny bit, so the jar will last a long time. I hate the "slimy" mouth feel from the gums.

My husband has textural issues with too much glucomannan that I don't really understand, but deal with. I am slowly experimenting with it as a thickener though- making sure to not use too much.

He let's me know!!

Wow! How did I miss this recipe? I have longed for a decent replacement to my old high carb sweet and sour sauce! Yay!!!

Red bell pepper powder can be found online, only place I've ever seen it. What I did was just grate some in as the recipe says, and I actually used a green bell.
