Soobee's Pecan Pie

Oh...My....Gosh! I made your pecan pie for Thanksgiving (one chocolate, one not) and it was so so so good!
I subbed 1/4 cup of the Vitafiber with Sukrin Gold fiber syrup, but that was it.
Using Kevin's pie crust, you could barely tell this was a low carb pie.
I don't know why I waited so long to make this.

I agree, it is insanely good. This pie deserves some kind of award! Soobee's VF cookies are also amazing if you haven't tried those.

Very curious...What did you do to make a chocolate one?

Yes yes yes. I made them in bar form for Thanksgiving and they are incredible. My kid has gone through the entire pan and says that it is the best pecan pie she's ever had. High praise coming from her.

I ran low on Vitafiber so I had to sub half of it for maple maltitol syrup, which I've amazingly grown a tolerance for. I decided to go all the way and added maple extract along with a tablespoon of maple Whey Low--the BEST.

Bonbon - I added Lily's chocolate chips to the filling mixture. I think I used about 1/2 to 3/4 of a cup.

Soobee, what would you think of replacing the tagatose with the new BochaSweet, which is also a monosaccharide/prebiotic? I don't have tagatose, and it's probably the only sweetener I haven't bought.

Baricat, Soobee's recipe is terrific, I say that yes you can sub out the tagatose, I would sub it out for another sweetner that will give you the 1/2 c. of bulk. I use another pecan pie recipe and use 1 T. of polyd in it, the polyd just lends to preserving and gooeyness, why did I add it? lol, cuz I have it. My recipe also uses a lot of VitaFiber or FiberYum, and is the corn syrup sub. So yes, no need to use tagatose or poly d if you have the VF or FiberYum.

One needs to remember when looking at older recipes, we were using what we had on hand, as most of us here have done, some items have been replaced w/ other things as they came on the market.

Here's my pecan pie recipe, the important ingredient is the corn syrup sub-VitaFiber or FiberYum, whichever is cheaper to buy.

Mix well, 1/8 c. br. Truvia, 1/4 c. Truvia, 1/8 c. xylitol, 1 T. polyd
polydextrose needs to be mixed well w/ dry ingredients
Mix together, 1/4 c + 1/8 c. vitafiber, 1/2 tsp vanilla, 1 1/2 eggs
2 T. melted butter
Add dry into wet. Using 6 muffin liners, put pecans in bottom, fill w/ mixture. Bake at 350 for 20 mins. No need to refrigerate these for at least 4 days anyway. They freeze extremely well.

Baricat, next time that I make these, I'll sub out 1/8 c. of white Truvia for the BochaSweet. I like using the Truvia's and since I don't make a lot of sweets, the bit of sugar in the Truvia's isn't a deal changer for me, I too am a type 2 diabetic. In this recipe, polyd acts as a mild sweetner and gooey factor. As you see I tend to use a blend of sweetners but if I had no polyd, I would just add in another 1/2 T. of FiberYum. And by using the Truvia's in sm. amts. hubby will eat the sweets I fix. HTH
