Miracle Dough/Mozzarella Dough with Carbquik?

Has anyone ever tried incorporating Carbquik into the mozzarella dough? I was attempting to make some Jamaican beef patties with mozzarella dough and used half carbquik with half Splendid bake mix. I am not sure it was the Carbquik or the cheese, or plain old user error, but the dough was extremely hard to work with. It kept tearing and the cheese seized up in the dough. I have made these before using Jen Eloff's Miracle dough and did not have any issues. I wanted to use Carbquik because the crust of the Jamaican beef patties has either shortening/butter/beef suet.

Can you post the recipe for your beef patties? I wouldn't mind making them and seeing if I can tweak the dough.

I've experimented with mozz dough using Carbalose and homemade lc flour --and also regular flour! I had to use some liquid to bring it all together.

I don't have a specific recipe but here is a recipe for the high carb dough

PASTRY

2 cups Flour
1/4 teaspoon Salt
1/2 tablespoon curry powder
1/4 cup Solid shortening
1/4 cup (1/2 stick) margarine
1/3 cup Cold water

Sift the flour, curry powder and salt into a large bowl. Cut in the shortening and margarine until crumbly. Add the cold water to make a stiff dough. Lightly flour a wooden cutting board and roll out the dough until about 1/8-inch thick. Cut out 8-inch circles. Cover with wax paper or damp cloth until ready to use. You can place the dough in the refrigerator overnight. If you do refrigerate, remove the dough at least 15 minutes before using
