Chocolate Peanut Butter Fat Bombs to die for!

I just made the easiest, most delicious fat bombs ever!

Melt four small squares of baking chocolate, 4 T of butter or coconut oil (I did it in the microwave--about 50 sec. total--stir after 30 sec), add 4 tsp of sweeter of choice, 1-2 tsp vanilla and pour into molds. Top with a tablespoon of peanut butter on each one and freeze for about 30 min.

Also can use 4 T of cocoa (unsweetened). The original recipe called for cocoa and coconut oil, but I used baking chocolate and butter, which is what I had on hand.

yummmm peanut butter and chocolate. I'm going to try this, although I haven't had a lot of luck with fat bombs in the past. They always seem to "greasy" to me.

Do you know how many ozs your baking chocolate equals? I have two different kinds and each are different weights/sizes. And what kind of sweetener did you use?

4 of these squares equal one ounce. I used Splenda, but you can use the sweetener you prefer. They aren't too greasy (to me), but you can always use less oil/butter if that is a problem. The original recipe asked for unsweetened cocoa, but I used baking squares. They are delicious!

Thanks Cindy. I'll probably make some later this week.

Today I made some LC chocolate mini muffins with avocado (flourless) and they turned out good. But next time I'll use a little more chocolate and sweetener. I'll probably freeze a bunch tomorrow.

Then I'll move into the fatbombs.

Since Sunday I've only had bacon and eggs, lots of crab with butter (son in law gets his limit out in the canal) and cucumber and tomato from friend's garden. I feel so well fed!

Sounds like low carb is going good for you right now. That's great!

Sure...next tme I will use a little more cocoa powder and sweetener. They mixed up real well in my food processor.

Chocolate Avocado Mini Muffins

1 ripe California avocado

1 cup sunflower seed butter

2 large eggs

6 tbsp water

6 tbsp cocoa powder

Sweetener equivalent to 1/4 cup sugar (more to taste)

1 tsp baking soda

1/2 tsp vanilla extract

1/4 cup dk chocolate chips for topping

Preheat oven to 350F and grease a mini-muffin tin well.

Add avocado, sunflower seed butter, eggs and water to a high-powered blender or food processor. Blend until smooth.

Add cocoa powder, sweetener, baking soda and vanilla extract and continue to blend until well-combined and smooth. Batter will be very thick so you may need to scrape down the sides with a spatula a few times.

Spoon out batter into prepared muffin tins and top each muffin with 4 or 5 chocolate chips. Bake about 12 minutes, until just firm to the touch. Remove and let cool.

Serves: Makes 24 mini muffins.
2 muffins per serving
152cal, fat 12.46g, 7.69g, Total dietary fiber: 2.64g
