Anita's Cheese Danish for 1

I made a cheese danish that has only cheese and no grains or even nut flour. It was really good.

I have liquid sucrolose that measures the equivalent of 2 teaspoon sweetness per drop. Not everyone likes things really sweet so adjust your preference.
Use whatever sweetener you prefer. Stevia or whatever.

1 whole egg
1/4 to 1/3 cup of shredded mozzarella
2 tablespoons green can Parmesan cheese
6 drops of sucrolose or 6 packets of splenda
1/2 teaspoon baking powder
1 teaspoon vanilla

Start with just 1/4 cup of the mozzarella but when you stir all the ingredients together it should kinda look like thick chicken and noodles but if it is to watery add a bit more mozzarella cheese.

Use a dish that is about danish size that is oven safe. Spray it and pour the mixture in it spreading to the edges.

Soften 2 tablespoons of cream cheese and sweeten to taste I used three drops of sucrolose or 3 packets of splenda. Put it in the center of the mixture

bake 15 minutes till golden brown.

I have one baking now. Sounded so delish! I had to use monetary jack and a granular stevia blend. Bake at 350? I'll watch it closely!

yes sorry, I didn't realize I didn't put the temp. Do watch it if it starts to brown to fast lay a piece of aluminum foil lightly over the top and let it continue to bake. It needs the 15 minutes

Let me know what you think. My sister made it and loved it.

Do sweeten to taste. Not everyone likes things as sweet as I do

My toaster oven runs slow, 17 minutes. It tastes great, I went easy on the sweetener because of the change from splenda. I had a bad experience with eggs so I tend to avoid them but love cheese!
Its wonderful! The cheese gives it a nice chew and its not eggy such that I can't eat it. Thank you!
Took a pic but don't know how to add it. I'm on an android too.

Fantastic, I also made one and made a topping of butter and cinnamon and added just a pinch of xanthum gum so it wouldn't be crazy runny. Made a great cinnamon roll in place of the cream cheese

I used the xanthum gum in the butter with cinnamon. I tried it before and all I had was melty butter and cinnamon everywhere. It didn't stay on the top. Still tasted great though.

I didn't notice any sharp taste at all. Didn't seem salty either. Way better texture than any of the mug cake I've tried.

Ooppps! Thickening the butter sounds perfect! I'm still satisfied from having it with cup of coffee. I did my morning exercises after that and felt great.

I didn't think it tasted sharp either. It is very easy. To me easier than the miracle dough rolls and quick for one person. It has quite a bit of possibilities to play with too.

I know there are some who do not use aluminum foil but the reynolds non stick aluminum foil is my go too. I line all pans with it and you don't really have to spray much and nothing sticks. Glad you liked it

I used coconut oil as well. Mine was in its solid state, so maybe I had a thicker coating.

I was out for several hours and only had a diet rite soda since I had the "danish" and no hunger pangs.

Blueberry Danish

I bought mozzarella and eggs yesterday, plus some blueberries.

I did everything the same except for putting the tiny blueberries on top of the mix (10) and a few into the cream cheese (5-6). It's so tasty. I doubt I'll get bored with this recipe for a long time.

Anita you should post this on the 3 ingredient recipe sticky. Lots of the recipies are 4 or 5 ingredients, but this is super easy and flexible... but mostly tasty!

It is so easy and is very tasty. I like it better than a muffin in a minute

Yesterday I made a cinnamon topping. I still have some old diabeti-brown but you could just add a teensy bit of blackstrap molasses to the mimic brown sugar.

I used a tablespoon of diabeti-brown about a tsp cinnamon, a pinch of xanthum gum, a tablespoon of melted butter and stirred it together. I placed it over the batter before baking. It was really good. I then made a softened cream cheese frosting of a couple tablespoons cream cheese and a couple drops of liquid splenda and put over the top. Just like a cinnamon roll. I know they have brown sugar replacements but don't have that

I've made this with both mozzarella and cheddar. The mozz was a little "more tangy" but not really that different. This morning I used mozz, but left off the parmesan and used a TB of coconut flour. I also added 1/2 tsp cinnamon which made it a brown danish, but that is ok. Tasted great! For the topping I used cream cheese and stirred in lemon juice for right consistency. Delicious!

Thanks Skeeter! this is a great easy recipe for a breakfast treat.

I've made it savory also. Leaving out the sweetener and cream cheese, adding cooked sausage, I keep homemade cooked bags of sausage in the freezer as DH has to eat low sodium. I added 1/3 C of this precooked thawed sausage. I'm not a big sweet eater and your recipe is so delicious I didn't want make it a habit. But thought the idea of a savory might appeal to some as well.

Anita, I have enjoyed your Danish recipe immensely. Thank you for posting. I substituted flax for the Parm this morning and I prefer that variation as it provides more fiber in my daily WOE. I realize that many cannot tolerate flax but it is a viable option that is just as delicious!
