zucchini bread in the microwave/waffle iron

I made a batch of my zucchini bread yesterday, but instead of baking it for an hour in the oven, I put half of it in the waffle iron, and half of it in the microwave like mug muffins. Both came our really good, and in record time. I am going to be having zucchini "muffles" and mug muffins a lot....lots of zucchini! I used the little corningware square mini-casseroles and nuked them for 2 minutes each. For the waffles, I cooked them a little longer than I would a standard waffle. They were not crisp when they came out of the iron, but I let them cool a bit, spread them with cream cheese sweetened and with a bit of vanilla, and folded them in half. My husband was ecstatic.

I'm going to make another recipe today and freeze them.

Zucchini Bread
2 eggs
1/2 cup vegetable oil
Artificial sweetener equal to 1/2 cup sugar (I use liquid sucralose)
1/2 cup erythritol
1 cup shredded zucchini
1 tsp vanilla extract
1 cup Carbquik
1/4 cup pecan meal
1/4 cup ground golden flax
2 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 cup coarsely chopped pecans

Preheat the oven to 325 degrees.

Grease and flour one 8x4 inch or 7.5x3 inch loaf pan. In a large bowl, beat the eggs until light and frothy. Mix in the oil and sweetener. Stir in the zucchini and vanilla. Combine the flour, cinnamon, soda, baking powder, salt and nuts and stir them into the egg mixture. Spoon the batter into a greased and floured loaf pan. Bake for 60 to 70 minutes, or until a toothpick inserted into the loaf comes out clean.

Yields 16 half inch slices, 1.5g carbs each.

You just reminded me of the Will It Waffle blog. Zucchini bread WILL waffle. Who knew?

Sounds great Sharon, I knew I kept my waffle maker on the counter for something this wkend. Have been wanting to try out my dehydrated zucchini chips, think I'll try this one.

bumping another great recipe and idea. I did try this in my waffler and loved it. As Sharon stated, so much faster than baking. But if you need a loaf, the recipe is great
