Cheesy Waffle Thingies
This is a continuation, tweaking of a cheese cracker recipe that I had posted.
Today I decided to try the mixture in my waffle maker. I'm well pleased. 1/4 c. almond flour 1/4 c. jenn eloff's flour mix (oat flour) 1/4 c. carbquik 1 tsp. baking powder 2 eggs 3 T. worchestshire butter (the butter mix that goes on the sm. ham sandwiches) 2 c. shredded sargento dbl cheddar 1 c. shredded white cheese (jack) Mix first 4 ingredients well, in another bowl beat eggs and add in cheese. Pour butter into cheese, add flour mix and mix up. Let sit while waffle iron heats up. My temp goes fr 1-6, set mine at 3 1/2, w/ a medium scoop, flattened a tad bit and laid in 1 of the 4 quadrants of my pre-oiled waffle iron. Cooked for 2 1/2 mins. I used the worchestshire butter because I had made some up a couple of wks ago. If I didn't have it, I would add 2 tsp. worchestshire sauce, 2 tsp. mustard & 2 T. melted butter to the cheese/egg mix. These lose their crispness stored in a Ziploc but are still good. Heating in the microwave for about 7 seconds gives them a chewiness. I froze some of the dough in portions to see how it will do thawed and then cooked in the waffle iron. I like them the best out of the iron while still crispy. Sry Beeb no carb count, I just know it's low and that's all I go by.

So my frozen portions were in the freezer for 4 days. Layed a couple out on the counter in saran and let thaw. Cooked in the waffle maker as above. You can't tell the dough was frozen...........terrific. For me , these are best when crispy and stay that way several hrs until you put them in a Ziploc bag. So being able to make this dough up ahead of time and freeze works well. I still have some on the counter in a bag, they're good, I just love the crispy of the fresh ones. HTH

bumping..........an excellent freezer item, just pulled some out that had gotten behind some other things, had a date of May 2016 and I thawed, cooked in the waffle maker, just like fresh.
