Individual Cinnamon Coffee Cake

This morning I made cinnamon rolls for my Grandson and Hubby and thought this sounds so good. I decided to try something different. Funny how you read this idea in one place and another idea in another.

No picture as I ate it too fast LOL
This recipe of mine was what I bounced my first thoughts on. Different of course because I only wanted one serving.

1 T melted coconut oil
1 egg beaten
5 drops of liquid splenda (or to taste)
1 tsp diabetisweet brown (cause I still have some) optional
3 T Jennifer Eloff Bake mix
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp vanilla

Mix well
Added a handful of mozzerella cheese till it was a thickish batter

Sprayed my stonewave dish and poured batter in which doesn't really pour more plop LOL Press it down to the edges

Now something new and I wish I had thought to do this in my original cinnamon roll recipe...added almond flour to the topping. I am like DUH why didn't I think of that before

Topping mix
1 1/2 T almond flour
2 packets truvia I used 1 1/2 tsp ideal white
1/2 tsp cinnamon
1/2 tsp diabetibrown (optional! I wish they still made this)
mix these dry ingredients together

Pour all these dry ingredients over the top of the batter, dot top with tiny pieces of butter equally about a T of salted butter

Sprinkle over the top chopped pecans or any of your favorite nuts or just leave them off

I baked this I did not microwave as I think this give a better texture baked than microwaved.

350° in my toaster oven on bake with the stonewave lid on for 15 minutes. Removed the lid and baked 5 min more till the top was slightly brown.

This is really good.

If you try it let me know what you think. I think the addition of the cheese to the batter is what makes this cinnamon coffee cake texture great

Skeeter - I don't have one of those stone wave cookers but, aren't they designed for just microwave cooking? I didn't think they could go in an oven or toaster oven.

It is ceramic and works just fine in the oven. I have used it many times in both. This would work in any dish that you would make and individual serving in. You could try the microwave but I cannot guarantee the results will be the same. Do adjust the sweeteners to your preference. The diabeti-sweet could be left out

I am going to try this with sweetened cream cheese in place of the topping to make a cheese danish

Edited to add: I did go to their website and it says This cooker has been designed for microwave use only, and should not be used in a conventional oven or on the stove top.

I have no idea why!!!!!!!!!!! Course not the stove top but this works just fine in the oven. So use a dish you wish. I have no plans to stop using it in my toaster oven. It is a convection oven and I am not sure if that makes a difference.
