Thanks sweetie. You have my brain going now and a strawberry meringue sounds wonderful.
I think I will try that today. Thought about it all day yesterday. I'm also working on a cashew cream for zucchini noodles or gluc noodles.

This makes a very thick cream.I'm also very sensitive to lemon (acid) juice so you can add more if you need to. Take your cashews and soak overnite in a cereal bowl. Enough water to cover cashews, when soaked rinse them .A regular blender will worked very well.
Cashew Savory Cream 1 c. raw cashews(already soaked ) 2 T. fresh lemon juice 1 T. apple cider vinegar 1/4 tsp. sea salt 2 T. nutritional yeast 1/2 c. water Put soaked raw cashews in blender with everything else. Blend for 3 to 10 minutes ( depending on blender) until you get a thick sauce. Taste _________________________________________________ I then took 3 tablespoons of the sauce and 2 T. of cashew milk to thin out sauce so that I can use in a recipe. I made chicken , gluc egg white noodles, sauteed mushrooms and poured the sauce over it and served. Loved it.

DJ Foodie had a recipe on his site that I wanted to recreate in dairy free form.It was a brownie raspberry cheesecake.I had to make a topping I would use for d/f cream cheese.
Cashew sweet cream 1 c. raw organic cashews( soaked overnite ) 1/2 c. sweetener ( used erythritol powdered) 1 tsp. lemon juice you can use a flavoring here if wanted. Banana , vanilla, chocolate etc. Put the soaked cashews in blender with sweetener and lemon juice. Spin until really smooth. I will next put up my version of the brownie dessert.

Peanut Butter Powder
I have portion control problems with peanut butter. I ordered this peanut butter powder and it's a great option. I added it to some low carb chocolate candy tonight and I've also added it to my chocolate ice cream.
I ordered it from Amazon. It's called Peanut Butter Powder by Hoosier Hill Farm. It comes in a 1 lb. container. |

Earth Balance margarine- Dairy Free
I found a dairy free margarine at Trader Joe's called, Earth Balance. If you have a problem with soybean oil then you won't like it. I use very little of it but it's nice to have a replacement for butter sometimes. It cost $3.99. I used it today to put on top of my LC Chocolate Mayo cake when it was warm and then sprinkled Erythritol on top. YUM!

SF Chocolate Chips
I just made these chocolate chips and they were very good. They remind me of the semi-sweet chocolate chips you buy in the store. I combined a few ideas from Esther's recipes and came up with this:
2 oz. unsweetened baking chocolate (chopped) 2 Tbsp. Coconut Butter 1/4 c. sugar substitute or to taste (I used Erythritol with just a TBSP. of Xylitol) Melt chocolate in microwave for 30 seconds at a time and stirring in between. Add warmed coconut butter. Add sugar substitute and then microwave again for for about 10 seconds and stir. Pour onto a very small cookie sheet lined with Parchment paper. Spread thin. Put in freezer until hard which won't take long. Break up/cut into small pieces the size of chips. I used Esther's chocolate chip cookie recipe. They were wonderful! |

Dairy free butter substitute: organic palm oil by spectrum
I love coconut oil with the best of em but sometimes you want something solid at room temp. I've recently started using spectrum organic palm shortening and it's an amazing butter replacer for cakes, icings, flakier pie crusts etc. I've just ordered the organic butter flavoured one as well. It's a really nice change to melt over things, like warm veg because it is not slick like oil. Really healthy for you too.

So here comes the chocolate!!!The recipe I'm giving you only the chocolate then I made many other recipes from the chocolate.
Chocolate dairy free sugar free candy 2 cans full fat coconut milk 4 ozs. unsweetened chocolate 1/3 c. cocoa powder 1/4 c. powdered Xylitol 6 packs truvia 1/4 tsp. stevia 3/4 c. cocoa butter melted Get everything ready and set it out .Have all of your candy containers near you. Day before take the 2 cans of coconut milk and put in refidgerator for the cream to come to the top Spoon the cream from the can and put into a small pan and warm up then put food processor or blender. Melt cocoa powder , X, truvia, stevia and bakers chocolate all at once. Taste if not sweet enough add more sweetner. Melt cocoa butter and measure 3/4 c. and put in the food processor with everything else , blend very well. Pour everything in the food processor or blender untill really smooth. Now you can make all the ones I did. 1. Tray of chocolate raspberry bon bons, Raw cheesecake, Twix. 2 .Chocolate walnut brownies 3.Chocolate peanutbutter cups 4. Chocolate covered butter finger balls 5. Chocolate bacon bars Enjoy!!!!! I made the chocolate candy recipe you posted and it was WONDERFUL! This is how I used it: - I made candy by pouring about a tablespoon into a small paper cupcake liner in a candy mold. - I covered frozen blueberries. They almost taste like chocolate covered raisins. Keep frozen. - I used it to cover salted peanuts. - I lined an 8 x 8 with parchment and poured a thick layer of chocolate candy. Put it in the freezer. Then cut it in small pieces and used half of it for LC chocolate chip cookies and the other half I'm saving for another batch later. The only change I made is that I added 2 tsp. vanilla extract and a pinch of salt to yoru recipe. Thank you SO much, Esther! You are a blessing! Georgene |
