Chia Fudge.......full of fiber

Chia Fudge

1 c. peanut butter
3 oz. 85% chocolate
1/2 c. powdered xylitol
1/2 tsp. vanilla
1 c. chopped raisins
1 c. toasted walnuts
2 ˝ c. chia seeds

Instructions: melt peanut butter, chocolate and xylitol together. Have other items in bowl, pour over melted stuff and stir. Place in a 8 x 8 pan lined w/ saran. Refrigerate and remove fr pan, cut into 36 pieces. Keep in fridge.
My last batch lasted 2 1/2 months in the frig.
I have removed some fr the fridge and left on the counter for 4-5 days.
Great fiber content..........per 36 pieces...........6g fiber per piece

Chia is loaded w/ fiber. 75g per cup. Try subbing in hemp hearts or something else for the raisins if you want.

Try again. It ought to look something like this:

I switched the IMGs to INGs so they would show up (and not make a broken link). Yours would say IMG.

Well never mind the photo - how did it taste? I'm looking for ways to use chia seeds. Do you think ground chia seeds would work? I have them in my pantry.

This is terrific Susie. I'm made it many times, taken it to the dentist office bk at Christmas and they loved it. Don't know about how ground chia seeds would work but the next time that I make it, I'll try part w/ ground chia and let you know.

You can sub out the chia for anything that will give you the same amt of bulk. But I was going for a recipe where I could maximize chia seeds because of their fiber content. And because this is so hefty and rich, you really don't want much.

FYI.......chopping the raisins well will disperse them thru the whole pan and after chopping them, toss w/ some chia seeds so that they don't stick together.

FYI..........because of the chia, drink some water, this in turn will bulk up, reason it is quite filling. There are many times that I just don't want to eat and being a diabetic, it's not a good thing to skip meals. This chia fudge helps w/ that. And I call it a "fudge" because it reminds me of the texture of fudge. HTH
