battered onion rings

I made these today after adapting a high carb recipe I had on hand. They were delicious! Just like the high carb onion rings from my past.

Battered Onion Rings

1 large onion, cut into 1/2-inch thick rings
1 cup “buttermilk” (1/2 cup half and half, 1/2 cup water and 1 tsp vinegar OR 1 cup Calorie Countdown milk with 1 tsp vinegar))
1/2 cup Carbalose flour
Salt and pepper
1 tsp. garlic powder
1 tsp onion powder
3/4 cup soy flour
1/3 cup HWC and 1/3 cup water OR 2/3 cup Calorie Countdown milk
1 egg
1 T vegetable oil
1/2 tsp salt
Oil for frying

1. Soak onion rings in buttermilk for 1 hour.
2. Meanwhile, mix Carbalose, salt and pepper, garlic and onion powder in a medium bowl.
3. Whisk soy flour, cream/water, egg, 1 tablespoon vegetable oil, and salt together in a bowl until smooth. Add additional water as necessary if too thick.
4. Heat oil in a deep-fryer or large saucepan to 350 degrees F.
5. Shake off excess buttermilk from onion rings; dredge in Carbalose mix; shake off excess then dip in batter.
6. Fry the battered onion rings, working in batches, until browned, about 3 to 5 minutes. Transfer fried onion rings to a paper towel-lined plate using a slotted spoon. Salt if desired.

Fat 14.1g
Total Carbs 12.22g
Fiber 4.36g
Protein 9.6g
NET CARBS 7.86

I cut my onion a little narrower than 1/2 inch and got quite a few rings. It makes 6 servings s written.
