Sausage & Mushroom "Pizza" Bake

I've come up with a satisfying sub for my old favorite sausage, mushroom & onion pizza.

My measurements aren't exact, and I don't have a total carb count, so YMMV. This is basically 1 serving, but you can double the recipe easily.

Brown & crumble 1 Italian sausage link, then add 1Tbs. chopped onion. Cool, then add approx. 1 oz. shredded Mozzarella cheese and a dash of grated parm. (Green can). Stir in approx. 2-3 Tbs. pizza sauce. (Homemade or the lowest carb you can find. I use L.E. Roselli's, 3 carbs per 1/4 cup.) Set aside.

Saute 4 Oz. sliced mushrooms in butter until tender & browned. Spread in the bottom of a small baking dish or an 8" oven-safe skillet. Cover with a few Tbs. Shredded Mozzarella, then the sausage mixture, then top with a little more shredded Mozz.

Bake at 375 for about 10 minutes until everything is bubbly. Let stand for a few minutes out of the oven, then slide onto a plate.


I'm not into trying to recreate high carb food into low-carb, but this particular passion of mine was just too easy to convert.

Looks excellent. I just passed it on to someone who is flirting with starting LC, and asked me what type of dinners to expect. I can definitely see this one in my future.

That does look good. I could see this as a one minute muffin by cooking and draining the sausage and then nuking everything to cook it into the muffin ingredients. Also a breakfast sausage type bake thing - there I have convinced myself - I will try it!
