I tried to summarize the various "basic" Muffin-in-a-minute recipes I've seen:

* 4 tablespoons "dry" ingredients
* 2 tablespoons "wet" Ingredients
* 1 large egg
* 1/2 teaspoon baking powder
* 1/2 to 1 teaspoon spices/extracts

Dry ingredients could be all or a mix of almond flour, flax meal, coconut flour (but cut dry measurement in half), protein powder, oat fiber, etc.

Wet ingredients could be butter, oil, cream, water, almond milk, etc. More wet might be needed with coconut flour, since it absorbs so much.

Savory spices/extracts could be garlic powder, onion powder, smoked paprika, Italian seasoning, cumin, cayenne pepper, curry powder, salt, pepper, etc.

Sweet spices/extracts could be sweeteners, SF syrups, cinnamon, almond extract, vanilla extract, pumpkin spice, nutmeg, ginger, etc.

You can also make up a big batch of the "dry" ingredients/spices/extracts plus the baking powder. Then just take a 1/4 cup scoop of it and add the egg and "wet" ingredients/spices/extracts. Makes it quicker to make each time.

For example, I like to throw 3 tablespoons of butter in my mug, melt it in the microwave and swirl the melted butter around the sides of the mug, then throw in the dry ingredient mix with and egg and wet spices/extracts (if any). Very quick.

Here are the MIM recipes from the Atkins site

Basic atkins muffin in a minute
INGREDIENTS

4 tbsps Organic 100% Whole Ground Golden Flaxseed Meal
1/2 tsp Baking Powder (Straight Phosphate, Double Acting)
1/2 individual packet Sucralose Based Sweetener (Sugar Substitute)
1 tsp Cinnamon
1 large Egg (Whole)
1 tsp Unsalted Butter Stick

DIRECTIONS
For this recipe 1 packet of sucralose equals 2 teaspoons; use 1 teaspoon per muffin.

Mix the flax meal, baking powder, sugar substitute and cinnamon in a coffee mug or single-serving soufflé dish.
Add the egg and butter (or oil). Mix with dry ingredients.
Microwave 1 minute or more, until firm
Turn out and serve with butter or cream cheese. Or toast before applying spread. Makes 1 serving.

basic atkins almond muffin in a minute
INGREDIENTS

1/4 cup Almond Meal Flour
1 tsp Sucralose Based Sweetener (Sugar Substitute)
1/4 tsp Baking Powder (Straight Phosphate, Double Acting)
1/8 tsp Salt
1/2 tsp Cinnamon
1 large Egg (Whole)
1 tsp Canola Vegetable Oil

DIRECTIONS

Place all dry ingredients in a coffee mug. Stir to combine.
Add the egg and oil. Stir until thoroughly combined.
Microwave for 1 minute. Use a knife if necessary to help remove the muffin from the cup, slice, butter, eat.

Note: Your MIM can be toasted once it's cooked and topped with cream cheese if you like. Replace the cinnamon with other spices, sugar-free syrup or 1/2 tsp unsweetened cocoa (net carb count will be .2g higher). Add a tablespoon of sour cream for a moister MIM. Change the shape by making it in a bowl.

I have to purchase almost all the ingredients. I also need some large mugs. I will be food shopping this weekend. wish me luck. I am omitting the salt though...my choice. I WILL get back to y'all with the (hopefully successful) results. Love & Profits: FLATFERENGHI

1 Minute Muffin:

1/4 cup dried ground tube grubs
1 slug liver (pureed)
1/8 tsp Salt
1/2 tsp dried ungaberry
1/4 cup snail juice
1 smashed gree worm

Mix ingredients in cup. Place cup in replicator and set it to cook on high.

Enjoy!

(None of that hoo-man food...)

I have tripled the recipe and baked in greased muffin top pan and it works great. Its been a while but i think 400-8 minutes was what i used. I freeze them and then toast when i want one.

frankly, i find the 1/8 tsp salt...

highly objectionable! also, try adding 1 jigger of Klingon blood wine into the mix. most refreshing. Love & Profits: FLATFERENGHI
