Asian Low Carb Recipes


Hi Folks,
I am looking for some good Asian low carb recipes -- chicken stir fry, chicken or shrimp coconut curry, etc. If you have any good ones, please share. Thank you!

I like the Ruled.me website for General Tso's Chicken and Kung Pao Chicken. I want to try his Orange Chicken, but I haven't gotten around to it yet.

There actually are quite a few on this forum - use the search feature and search on Asian and then try another for Chinese - I had a lot of them come up.

This is an East Indian curry recipe (from the East Indies, not from India).

East Indian Curried Chicken

2 tbsp avocado oil
4 boneless skinless chicken thighs or 2 breasts, cut into bite size pieces
1 small onion, cut into chunks
1 zucchini, cut into bite size pieces
1 bell pepper, cut into bite size pieces
1 can diced tomatoes with juice
3 tbsp Patak’s mild curry paste *
1 tsp Thai hot curry paste (optional)
1 tbsp curry powder
Artificial sweetener equal to 2 tbsp sugar (optional…we like a slightly sweet sauce)
1/4 cup water
1 carton Carbmaster yogurt, any fruit flavor or 1/2 cup sour cream or plain yogurt.
Peanuts, coconut, and/or raisins for garnish.

Cook the chicken in oil until lightly browned. Add the onion, zucchini and bell pepper and stir fry for 3-4 minutes. Add the sweetener, curry pastes, and curry powder, and cook and stir 1 minute. Add the tomatoes, and water, cover and simmer 30 minutes. Stir in the yogurt or sour cream and serve over caulirice or tofu/shirataki rice. Garnish with salted peanuts, coconut, (and raisins for non low-carbers in the family.)

You can also make this with leftover cooked chicken, turkey, beef, lamb or shrimp. If your diet allows, add half a small apple.

*NOTE: If you can’t find the curry pastes, increase the curry powder to 3 tbsp. And add 1 tbsp vegetable oil.

Makes 4 servings, 8g carbs per serving
