You could always cut american (or other) cheese into triangles and microwave them.
Sprinkle with a taco seasoning blend for the flavor, too

I cut lc tortillas into triangles and fry them. One 5g tortilla makes quite a few chips. I use the 5g tortillas from Sam's.

I have also fried my pasta dough. I make the pasta dough like I normally would, roll it out to about the third from the thinnest setting on my pasta machine, cut it into triangles, and fry it. I dont have a deep fryer, so I fry them in my electric wok because it has a thermostat so I can control the heat.

I've made it both with raw dough, and dough that has been boiled for about 2 minutes, and both worked well. You can season the dough with whatever seasonings you want to use.

Basic pasta dough

1/4 cup Carbalose flour
1/4 cup Wheat Protein Isolate 5000
1/2 tsp of salt
1 large egg

whatever seasonings you want for the chips.


Mix all dry ingredients in a medium bowl. Add the egg and mix until it gathers into a ball. Knead until smooth and elastic.

Allow to rest for at least 15 minutes.

If you have one, use a pasta machine. Otherwise roll it out as thin as you can with a rolling pin.

Recipe can be doubled.

You are one bright cookie in the kitchen my friend.

Today I'm stuffing a spaghetti squash with chicken, cheeses,
spices tomatoes, lotsa Mozzarella, and fresh tomatoes.
The chicken is already cooked so it should be ez.

Do you have any interesting spaghetti squash recipes?
I was thinking of a shirataki type mac n cheese inside
the squash. Anything different would be appeciated.

I picked up two small spaghetti squash this week...just a little bigger than a softball. I usually use spiralized zucchini, but they didn't have any really big enough to put in the spiralizer, so I got the spaghetti squash. I use them pretty much interchangeably for spaghetti, but prefer the zucchini for fettuccine or linguini. I make "real" pasta less often since getting the spiralizer. I still like the pasta best for lasagna...the zucchini tends to make the lasagna a bit too watery.

Also, I like the real lc pasta spaghetti cut into rice-sized pieces for rice substitute. Home made rice a roni!

Which brand of LC pasta do you use. I haven't found one that I really like.
