Here's my basic recipe: Just switch out the meat and cheese to suit yourself and for variety.

Ham, Bacon, or Chicken-Broccoli-Swiss or Cheddar Quiche Preheat oven to 360*

Put the following in a BUTTERED 9X13 cake pan.

Layer of cubed ham steak (1 lb. chopped cooked bacon) (or cubed rotisserie chicken)

Layer of 12 to 16 oz. cooked (and cooled) frozen broccoli cut into small pieces.

Layer 8 oz. shredded Swiss (or Cheddar) cheese

Put 12 eggs in a mixing bowl with 1/4 cup water. Mix well with whisk or electric mixer.

Add 1 & 1/2 cups Heavy Whipping Cream and mix.

Slowly pour egg/cream mixture over the ham (or chicken).

Sprinkle 4 to 6 oz. shredded cheese over the top.

Bake at 360* for 45 to 50 minutes until browned. Test with butter knife.

This makes 12 servings with a side salad or veggie OR 8 servings if eating alone.

I plan to be REALLY good today since it's the last day of the month. I'll have brekkie and lunch of coffee, HWC, & Splenda. Dinner will be bacon and eggs. I will also walk 6 miles or go the the gym and do 5 miles on the elliptical.

Last night I picked up a mesquite BBQ chicken and had that instead of bacon and eggs as planned. I expect to have chicken leftovers today and tomorrow. I make a mayo/mustard dipping sauce for it to add moisture and flavor.

I'm trying out a new recipe tonight - pizza crust made w/ canned chicken.

Going to put ranch dressing, bacon, cheese & mushrooms on it.

This is probably the first time I've made a low carb meal that I wasn't 100% sure about.

Dinner time should be interesting around here this evening.

Made meatballs with almond flour. Served them over cauli rice with LC marinara and topped it shredded and shaved Italian cheeses. Very, very good! 15 carbs total.

I had prime rib and green beans at a cafe today. I felt quite satisfied even though I didn't have a baked potato and hubby did.

I think I'll be having leftover rotisserie chicken for my food today. I'll also be walking at least 6 miles. I'm going to try to go flat out to get to Onderland this month.

Tonight's dinner will be 4 slices of bacon and two or three scrambled eggs. I may make another quiche, but probably not tonight since I'll be hiking from 6-8 and won't get home until about 8:30. I'll prob make that tomorrow, and I think I'll make it a bacon one! I kind of feel like that dog in the "Beggin Strips" commercial.

LOL about your dinner while on the egg fast.
I've been planning bacon and eggs for days, but today I think I really will make them! I already did a 3 mile walk at lunch, so I'm free tonight! Darling Daughter and I are going to go see the new King Arthur movie. I hope Jude Law's part is more than a bit part.

Egg and cream cheese pancakes sound YUMMY!

Last night I cooked the bacon, but not the eggs. I was pretty full after eating 4 slices of bacon. I saw King Arthur last night and was a little hungry after the movie, so had a late night snack of two cheese dogs. Not haute cuisine, but I like them

Tonight I will really try to make the eggs, or a quiche or something.

I have plans tonight to go to the pool with the fam , so will be heading to the park to walk my 3 miles at lunchtime or heading to the gym after the pool, not sure which.

A chicken and bacon crustless quiche is in the oven. When it it done I will tidy the kitchen as it cools then enjoy! I had a lovely massage this afternoon but still need to get in my 3 miles somehow. I haven't picked my poison yet.

I had egg and sour cream pancakes dusted with Splenda for lunch. I used 2 eggs and about 4 tablespoons of sour cream. I would have used cream cheese but didn't have any. The things were delicious! I am a dessert fan and these tasted almost like crepes or the inside of an eggy kruller doughnut. I may do a repeat for dinner.

Yesterday I had egg & sour cream pancakes/crepes dusted with Splenda for lunch then egg & cream cheese pancakes/crepes dusted with Splenda for dinner.
Today I had two plain scrambled eggs for breakfast and will have the same for dinner. I used a little bacon fat in the skillet. I get enough fat with all the HWC I have in my coffees. I'd like to continue the egg fast until I break into Onderland, but have only committed to do it through Friday. I'll decide on Friday whether to keep going or not.
