I make Scotch eggs a couple times a week! It's nice having something easy to grab and go. And DS (Mr Bodybuilding Protein boy) eats them non stop!

Ooops. I don't use that recipe. Just 1 16oz Jimmy Dean Sausage to 4 hard boiled eggs. So simple!
Hollandaise sauce is awesome over these too!

Start Date: Restarted 6/22/07. In a size 4-6 jeans now!
I've never had a scotch egg in my life. I may have to give this a try. I'm not a fan of plain hard boiled eggs tho. I like egg salad and stuff like that but not plain. Do you think I would like this?

I don't like plain hard boiled eggs, either. If i have hard boiled eggs, they have to be in something.. tuna salad, egg salad, etc. But I really liked these scotch eggs.

I sprinkled just a tad bit of salt in the yolk of each one, when I cut the scrotch egg in half to eat it. Yummy

Egg Salad for folks that HATE Egg Salad

* hard boiled eggs
* celery
* mayo
* bacon (crumbled)
* shredded cheese


i dont measure, ever....but this stuff is SO GOOD and i truly dislike egg salad! sometimes i like to eat it warm...

There are versions that are cooked... But it was originally like mayo; uncooked.

Here's the one I use.
Hollandaise sauce makes EVERYTHING taste better!

Hollandaise Sauce

Ingredients
4 egg yolks
1 tablespoon freshly squeezed lemon juice
1/2 cup unsalted butter, melted (1 stick)
Pinch cayenne
Pinch salt

Directions
Vigorously whisk the egg yolks and lemon juice
together in a stainless steel bowl and until the mixture is thickened and doubled
in volume. Place the bowl over a saucepan containing barely simmering water (or
use a double boiler,) the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will
scramble. Slowly drizzle in the melted butter and continue to whisk until the
sauce is thickened and doubled in volume. Remove from heat, whisk in cayenne and
salt. Cover and place in a warm spot until ready to use for the eggs benedict. If
the sauce gets too thick, whisk in a few drops of warm water before
serving.

Most of the recipes are induction friendly. I believe if they are not they say so.

Been a while since I read thru this whole thread, but I do recall there were initially some ingredients or quantities of ingredients here that were not strictly Atkins 2002 (DANDR) induction-legal.
