oh wow, these are delicious!!! i just made my first batch and i had one warm while the others chill in the fridge...they are brilliant! i could snack on these all day! i certainly need more cream cheese! i added a little cinamon and splenda to the top and they were perfect. next time i'll make some whipped cream to go with them!

How come when I made these they tasted like crap?
Is it because I used a liquid sweet N low instead of splenda?

Yeah, that stuff ruined a pumpkin custard I was making. Mom insisted on it instead of Splenda and it tasted horrible. It seems okay for small quantities like coffee, but not for baking I guess. Sorry!

I made them with splenda and thought they tasted gross. I have been reading this thread and am going to try some different stuff that ppl have suggested. I really want to like them...it would be such a nice snack!

Make sure you are giving them a *resting period* before eating them. They taste TONS better once they've sat overnight in the fridge.

brownie cheesecakes

I don't know is people have these sweeteners but a LCF chef game me a sweetener blend that's awesome and easy to make and use.

It uses granular Splenda, Erythritol, Xylitol,(I use emeraldforest) and Diabetisweet (in pharmacy section of Walmart)

To Replace one cup of sugar:
1/3cup Granular Splenda
2T Granular Erythritol (not powdered)
2T Granular Xylitol
2T DiabetiSweet

This make 82 grams (wt) of sweetener and although it's volume is less than a cup, it sweetens like a cup of sugar. Because it's not just one sweetener you get the combined bonus of all and less of the negatives of all one kind.

YAY! I did it!!!

I did it! I'm so proud! I made these for my low carb Superbowl party!!!

I followed the original recipe on the first page of the thread (except for mini instead of normal size) and topped with sugar free pie filling. The first time I made them I did the water bath thing and they didn't "fall". They were wonderful. This time I made them without the water bath hoping that they would fall in the middle and make a nice little spot for my filling! They did fall nicely but got brown around the edges without the water bath... I hope I didn't cook them too long and they still taste OK! I won't try them until tomorrow!

I do the same but use SF jam...I put it on the top about halfway done. I don't make them mini,I use custard cups and get 3 out of a half batch recipe!

These are so good its hard to believe how quick and easy these are to make. I like topping mine with sf preserves. I must agree these are best when cold.

My can said 8 carbs per serving. The serving size was 1/3 cup. I was easily able to spread the 1/3 cup between 8 mini cheesecakes making it an extra 1 carb each!

They were really good... but the ones in the water bath were better. I'll do that from now on. The water bath makes them more cheesecake like.
