Today I decided to fry up my zucchini and yellow squash before they went bad. Awhile ago I read a post about frying them up like chips. So I wanted to try that idea.
Here are the squashes (squashi?) after cutting them up with my microplane grater/slicer I got for Christmas. Made short work of getting nice, thin slices. Some of the uneven yellow ones I cut by hand, until I realized....hey I have a slicer! ![]() So here I am frying them up. In retrospect I think it would have been better to deep fry them in my Fry Daddy. I had to put way too much effort into keeping an eye on these and flipping each individual one. ![]() The finished product isn't exactly beautiful. Or abundant....because I kept eating them as fast as I was making them. hah! ![]() ![]() They were pretty good, although not sturdy enough to hold up to dips. If you are looking for a greasy, crispy, salty treat...well here you go. They do have a slight aftertaste which is of course, the squash flavor. |

I love squash. I make my chips either in the oven or in a food dehydrator, which produces very crisp...potato chip like chips that hold up in dips, etc. (I have even used these chips to make "loaded nachos".) If you don't have a food dehydrator, just slice them, then sprinkle them with salt--I use garlic salt, and put them in an oven at 200-250 degrees. just do a search here at LCF or an internet search and you can find a lot of information on doing this. Even though I have done them in the oven before, I usually do them in the dehydrator, so I don't have a ton of information on the proper temp/time in a standard oven. Also....Cleo's Dorito's chip that is made with zuchini....is FANTABULOUS! Your fried squash looks wonderful...and I think I'll be frying up some for dinner! Thanks, Dee |

apparently some people stab it a few times and place in microwave for 7 mins, then slice (should be easier cooked) and scoop but I never did it this way because didnt own a microwave for ages.

Deedlynn - do you use oil when making your squash chips in the dehydrator?
GTBraveGirl - I usually just cut the spagetti squash in 1/2, scoop out the seeds from each 1/2 with an ice cream scoop or big spoon, then place each 1/2 in a baking pan cut side down. Bake at 350 until they are fork tender. Set them aside until cool enough to handle then take a fork and from end to end just scrape them into noodles. |

My husband made CONEY ISLAND CHILI DOG PIE for me the other night. I love chili dogs and this tasted just like it! The recipe came from LINDA'S LOW CARB MENUS & RECIPES. She recommends Kosher hot dogs, so thats what he used. It sure was yummy!
![]() ![]() CONEY ISLAND CHILI DOG PIE 1 pound ground beef 1/4 cup onion, finely chopped, 1 1/4 ounce 1 tablespoon plus 1/2 teaspoon chili powder 1/2 teaspoon cumin 1/8 teaspoon pepper Salt, to taste 1/2 teaspoon yellow mustard Dash hot sauce 8 ounce can tomato sauce 2 kosher hot dogs, sliced in rounds * 2 eggs 1/2 cup mayonnaise 1/4 cup heavy cream 8 ounces cheddar cheese, shredded Brown the hamburger and onion; drain fat. Stir in the seasonings, mustard, hot sauce, tomato sauce and sliced hot dogs. Spread in a greased large pie plate; stir in half of the cheese. Beat the eggs well; whisk in the mayonnaise then the cream. Beat well until smooth. Stir in the remaining cheese. Pour over the meat mixture and spread evenly. Bake at 350ş 30-35 minutes. Let stand 10 minutes before cutting. Makes 6-8 servings Can be frozen * I used kosher hot dogs because they seem to be the lowest in carbs and other junk that you typically find in hot dogs. Hebrew National and Nathan's are both good and only have 1 carb per hot dog. You could add more hot dogs to this, but be sure to add the extra carbs. Per 1/6 Recipe: 538 Calories; 46g Fat; 27g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs Per 1/8 Recipe: 403 Calories; 34g Fat; 20g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs |

Ms Woods, That's true! I am a bit of a chicken, but I will get brave and try it!!
I think I might experiement using 2 eggs and no butter and see how dry they turn out. I really like the recipes that use the basic ingredients most of us already have on hand. That coney dog dish looks VERY good!! I love this thread but it makes me hungry! |

trying again....
Had no issues with folding yolk mixture into whites. Used a hand mixer to beat the whites til stiff. This was my first time working with egg whites so I'm really proud that they turned out like Cleo's pics! They were really simple to do, that I actually thought I did something wrong! Ms Woods, I got brave and made the donut holes..woo hoo! First batch I made without the butter but I did add 1/2 tsp of baking powder after the first couple since they didn't puff up well. With the addition of b. powder they are fluffy and soft (still warm).
I used 2 tbsp. melted butter in the 2nd batch. These absorbed a lot more oil (but that may be due to the oil being used from the first batch). Still very good. Maybe someone should start a thread of all the things that can be made with protein powder! |

I think oopsies are great, they taste like a savory meringue (almost like brioche once they've sat a day to "dry out"). You could always make a small batch 1 egg and 1 oz cream cheese (this would make 2 oopsies I think).

I haven't had any pics to post lately. I've been eating out all week. I have eaten Kentucky Grilled Chicken almost all week. I have been hooked on the grilled chicken and the fiery grilled chicken wings. I'll start cooking again tonight I hope. I have absolutely no idea what I'll be cooking yet.

No one has posted recently. Where is everyone??? I have been getting quick and easy meals so I haven't had anything decent to post. I hate to take a picture of Walmart rotisserie chicken.
BTW I am hooked on the fiery grilled wings from KFC. They are expensive though so I can't have them that often. I wish I could figure out how to cook them that way at home.

I haven't been having real meals to speak of. Well I have my lunch at work but I don't want to take pix of my food at work. People will start giving me the stinkeye. And when I get home I'm so tired I've just been having snacks instead of real meals. Hope to do some cooking on my coming days off.
