Tecnokitty, look for it in the baking section. I made up a batch of dry ranch dressing and keep it in the fridge. I use it for coating chicken breasts, first I coat them with mayo shake on the dry ranch and then bake with a little butter.

In our store, it's in the baking section, and comes in a round can that looks like this:





I never thought of making ranch powder with it - what a fun idea. Is it cheaper to make your own?

I think so, happy cricket. I don't buy the dry packages of Hidden Valley ranch dressing, but I've tasted it a long time ago. I think it has some sugar in it maybe? because I always thought it tasted sweet. I add a little granular splenda or Sweet One to the mix.

Here's my basic recipe, as far as I can remember, I can't find the recipe and I'm so disorganized. I can't find the can of dry buttermilk in the fridge either, lol. This is just a mix of different recipes I've seen in different places and I adjusted the seasoning to suit myself.

Dry Ranch dressing
Use whatever amount of dry buttermilk you'd use to equal one cup mixed
1/2 tsp onion powder
1/4 tsp garlic powder
1 tbs dry parsley
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp paprika
1/8 tsp cayennne
1 tsp of splenda
Mix well and store in the fridge. If you want to reconstitue it add the amount of butter milk called for with 1 cup of mayo. Leave the cayenne out if you don't want any heat.

OHHHHHHH I just made the chile roast beef yesterday in the crockpot and had it today for lunch. OMG It was sooooooo yummy and tender and I could go on and on about this. It is probably my favorite new recipe!

chuck roast
1 can rotel tomatoes
cook on low all day or high for 4 hours

1 large can rotel tomatoes w/ green chiles (hot or mild)
1 can chiles...

Then cook all day or 4 hours...


I agree. You can put fajita or burrito fixings in a bowl with it and yum, its even better! lol... And the next day is just as good. What I love about it, is you can nuke it and it tastes the same. Its not dry or doesn't have that microwaved meat taste (I hate that taste).

Great with chicken also!! In fact, I put a whole chicken in the crock pot with a jar of salsa and let it go. Then shred it when ready to eat. It is one of the kids' favorites. They eat it with tortillas, sour cream, and cheese, with scrambled or fried eggs, and they also make tacos out of them.

Bacon Ranch Chicken 2 ways!

#1
boneless breasts
dry ranch mix
Thick cut bacon

In a small pan (pie tin would do) put ranch mix in, roll chicken lightly in mix, wrap with bacon. Cook 30 mins or until chicken is done @ 375 degrees. Then transfer next to broiler to crisp bacon. Turn after a couple mins to crisp both sides.

Boneless breasts
bottle regular ranch dressing
bacon (any kind thick or thin)

Spray baking dish with cooking spray.

In seperate dish, squirt dressing into a bowl or pan. Roll chicken pieces in, then layer in dish. Bake @ 350 til chicken is done. Crisp up bacon while chicken is cooking. Crumble on top when dish is done.

Cabbage Alfredo

Thinly sliced cabbage "noodles"
1-2 T Butter

Brown cabbage in butter until tender and crispy. Add 1/4c cream and 1/4 c dry grated parmesan cheese. Salt and pepper to taste.

Ok--4 ingredients but delicious!

I been thinkin this thread needs some dessert options. I'm not as good as Kevinpa, but much more simpler and convienent to make.


Chocolate Orange

1 tsp cocoa powder
1 box SF orange jello (made according to directions, less 1/4 c.)
1/4 c. vanilla davincis

Pour packet of jello into a bowl, add cocoa, then 1 3/4 c. hot water and finally davincis. Whisk together until jello is dissolved.

Note- The cocoa doesn't really get dissolved and settles at the bottom, but it ends up tasty... trust me. DS LOVED it and practically ate the whole thing for me. BRAT! Also, you could put this in a jello mold, double or triple it and have a real decadent looking dessert.

Chocolate Ice Cream

2 tbsp cream cheese
1/4 c. davincis vanilla
1 tsp cocoa powder

Nuke cream cheese 30 seconds. Stir with a spoon until smooth. Mix davincis and cocoa powder until no/ very few lumps. Add to cream cheese mixture and stir well. At this point, you can freeze it. Or if you want it creamier with a little less cheesecakey taste, you could add a little half and half, make it more liquid. Then freeze it.


Enjoy them both! I know my son and I did!

Personally, I like mine thick and cheesecakey.

I made the Chili Garlic Chicken and Broccoli--I love spicy but it was very spicy--my nose is still running! I used about 2 heaping T of the chili garlic sauce--added a splash of cream and about 2T granulated Splenda to make it "Sweet Hot". It was very good, but not for the faint of heart! I'm making the chili roast beef tomorrow...can't wait!

1 can tuna drained
3 eggs
2 cups cottage cheese
grated onion for taste
salt and pepper
mix together put in sprayed muffin tins and bake for 30 minutes at 350

I think I will try the 'Tuna' muffins, but substitute Salmon!!

I don't care for Tuna hot from the oven.. But I love salmon patties, this will work great.

Here is a quick little dessert I put together all the time.

1. Take some whipping cream from a can and make some single puffs of it in the bottom of a bowl.

2. Drizzle some SF chocolate syrup.

3. Sprinkle with slivered almonds or pecans!!

Put that in the freezer for about 20-30 minutes. It will freeze slightly.
I always set my timer to check it. Your freezer may vary...

Delicious and really hits the spot in this heat for a cold dessert!

What a great idea. I'm going to make this for the NFL opener when I have people over, and serve it the same way. It sounds so good, maybe I won't wait until then, I want it now!

One of my favorite simple meals is pesto pork tenderloin. Rub the tenderloin with prepared pesto, and roast on a rack in the oven at 350F for about an hour (depending on the size). I turn it every 20 minutes. It's delicious. I've been wanting to try it on the grill. I'm sure it would be good that way too, if done over indirect heat so the pesto doesn't burn.

I just fixed a turkey breast in the crockpot.

1 6# turkey breast lightly dusted with poultry seasoning.
1/8 c butter put in hallow of turkey breast.

Cooked all day on low in crockpot.

Falls off the bone and soooooo tender!

Can't remember if I posted this before but it bears repeating:

LC Sloppy Joes:

Brown a pound or two of hamburger; drain. Squeeze in enough Heinz One Carb ketchup and mustard to make a nice orange color (I'd say it's twice as much red as yellow). Inhale.

I LOVE IT. My family eats it on buns or scoops it with chips, and I eat it with a spoon from a bowl. Good stuff and I always have the ingredients on hand.

Amazing thread - bookmarking to see when there are new entries. My better natured half is wary of my low carb recipes so this gives me some ideas of things to cook and mention nothing.

I'll think of some additions to share tonight.

Some basics:

Spinach sauteed in olive oil
Garlic
Parmesan cheese
Drizzle lemon juice

It's 5 ingredients, but I can eat half a bag of this stuff in a sitting.
