Sugar's Asian Low Carb Soup

OK, I was playing the Mad Scientist tonight and I made this soup. Much to my surprise, it was great!!! Hear is what I threw in the pot.

5 Cups of Chicken Bone Broth
1 Cup of Water
3 Cups of Chopped Dandelion Greens
3 Cups of Chopped Napa Cabbage
1 Cup Thin Sliced Button Mushrooms
Half a Cup of Red Bell Pepper Chopped Fine
3 Spring Onions Chopped Fine
1 Garlic Clove Minced
1Tbsp. Ginger Minced
2 Tsp. Salt
Half Tsp. Black Pepper

Simmer 2 Hours May need to add salt to your taste

That sounds tasty! I'd probably add a little splash of soy sauce instead of salt, maybe a teaspoon of toasted sesame oil. Add some shredded chicken and/or beaten egg, drizzled in, and you've got a meal!

Oh, That sounds good. I bet the Sesame Oil would really crank up the flavor and I think I've Got some Low Sodium Soy Sauce... Thanks

Yum! I'd throw in something a little spicy too- some sliced jalape˝o, or crushed red pepper flakes at serving time so everybody can adjust their own bowls. Great recipe!

OK You Guys, I added LS Soy Sauce, Sesame Oil and Shredded 5 Large Chicken Thighs, then I put a bit of Crushed Red Pepper Flakes in and We Got Us A Soup that ROCKS THE CASBAH. I'm going to freeze half of this and enjoy the rest. My husband even liked it. Thanks

One other thing you could add - If you like hot & sour soup - a dash to taste of rice vinegar.
