2-Minute English Muffin--Sugar Free Mom

This is really good and crunchy and holey..I used a Grab-it by Corning. Any cereal bowl or large ramekin would work. This is huge and 222 calories for half so you could use two smaller ramekins and make 2 separate muffins.

When you "toast" the muffin, after slicing it, it turns brown and a bit crunchy.
I used a toaster oven.


2-Minute English Muffin

2 tbsp unsweetened almond butter or peanut butter
1 tbsp butter
2 tbsp almond flour (I used Bob's Red Mill)
1/8 tsp salt
1/2 tsp baking powder
1 tbsp unsweetened almond milk/cream
1 egg, beaten


Instructions
Spray the ramekin you are using with olive oil cooking spray or coconut oil spray.
Add the almond butter and butter to the dish.

Microwave for 30 seconds and mix until smooth. Set aside to cool.
In a small bowl whisk the almond flour, salt and baking powder together.
Pour the milk and egg to dry ingredients and stir until combined.
Pour this mixture into the ramekin with the almond butter mixture and stir to combine well.

Microwave 2 minutes. For smaller ramekins, microwave 1 minute

Allow to cool a few minutes before taking it out of the ramekin and slicing in half to toast.
Toast until desired.
Enjoy!

These are awesome!!! I bake mine. She also has a recipe this week to bake 6 at a time.

Esther..I will do the 6 next time. Did you use muffin top pans? How did you store them?

I think if I made 6, I might freeze them cut, then toast them right before eating them. What do you think?

I haven't made the 6 yet. I proably will use muffin top pan and she used cashew butter in the 6.
I made 1 large one with the grab-it bowl.I used almond butter in mine.It's just like the almond butter bread and rolls but one at a time.

I made the large version using my muffin top pans. I could split each one in half nicely. I froze all 12 pieces in baggies and will toast them when I need them. I used the almond butter, but will get cashew butter when needed.

Yes Carolyn , I always use raw cashews . They are easier to digest.

I made a single recipe today. I used chunky peanut butter because that's what I had open. I cut into 3 pieces and toasted one for lunch, put butter and a smidge of peanut butter on it. It was good and I'm still not hungry yet.

I made a single recipe this morning and followed the recipe exactly (usually I don't LOL) using natural peanut butter. It was great! This is the best microwave bread I've tried so far. I split it in half and toasted it and ate it with butter and SF strawberry jam. It tasted really good. I think next time this could be spit into thirds.

I'm not crazy about the high calories ( have to watch mine or I stop losing weight!) so I'm going to try to either reduce the nut butter a little bit or substitute part of the almond flour with something else.

I made a single one this morning using a small pyrex bowl. I forgot to spray the bowl with oil but it didn't stick at all.

I toasted and spread with butter and sf blackberry preserves. Only ate half and it was very filling.

I thought it was very good and will make six next time in a muffin top silicone pan
