Low carb pizzelles....easy and AWESOME

I just made a batch of low carb pizzelles.....kinda surfed for recipes then combined ingredients of the ones I thought would be the best! They came out so thin and crispy!

3 eggs
1/2 cup butter melted
3/4 cup splenda (I used the dry one)
1/2 t of vanilla
1/2 t of (lemon, anise, whatever your preferred flavoring.. I like anise and used anise oil) if you use oil use less then if you use extract
2t baking powder
1 3/4 cup almond meal (grind your own if you don't have it)

beat eggs til frothy...add butter, splenda,vanilla, other flavoring, and baking powder............then mix in the almond meal. Drop by teaspoons on the pizzelle iron.

I have the small pizzelle iron that bakes pizzelles for entertaining (3 pizzelles to the iron) and I got almost 4 dozen. They are very thin and crispy! I can't believe how good they turned out!

Well, that just makes my day! I can't count the times I fight the urge to buy these at the store! Of course, now I have a good reason to get myself a pizzell iron for Christmas....

Sorry I am one of the few people that doesn't have a digital camera...I am one of the few technology ignorant people I know! As far as carb count I really couldn't tell you other than knowing there is no white flour involved. As far as a frying pan....can't help you out there either!

All I know is that the cookies came out awesome! I am very particular about trying new things and making them palitable but these are really good!

Diane, I have a pizzelle iron so I think I'll give these a try over the weekend. I've never made them with almond flour, I used Kevin's Carbalose cake and cookie flour mix and they came out really well.

I found a Pizzelle maker at A.. it also suggested a cannoli tube and the ice cream cone tube to form the cookies..

What do you suggest??? Do you roll your pizzelles??? I'm tempted to Merry Christmas myself..LOL

I have the cannoli tube also......actually I just bought my pizzelle maker because I love pizzelles and thought maybe I could make my own low carb ones. So far I have only made flat pizzelles but now that family found out I bought the pizzelle maker they are asking for cannoli's so I may give them a shot with the same recipe .............now just to figure out the cream filling!

OH...I'm finding you the filling recipe.. brb

This is from beeb:

You can halve the recipe as this one is quite large.


Cannolli Stuffing:

2 pounds ricotta cheese
1 1/2 cups sugar sub
2 ts ground cinnamon
1/4 cup diced orange peel, minced ( I don't use this, don't like the taste)
1 ts grated lemon peel ( don't use this either, just don't like the citrus thing)
2 ounces sugar free chocolate, chopped to look like chips ( or use the sugar free chips, they are great)

1. Beat cheese in large bowl with electric mixer at medium speed until smooth. Add sugar sub and cinnamon; beat at high speed 3 minutes. Add orange and lemon (if using) to cheese mixture; mix will. Cover and refrigerate until ready to serve.

2. Well ready to serve, spoon cheese filling into pastry bag fitted with a large plain tip, or use a zip lock bag and cut corner to form a hole. Pipe about 1/4 cup filling into each pastry shell. (do not fill shell ahead of time, they will become soggy)

3. Dip ends of pastries into chocolate chips. At this point you may want to powder some splenda to put on top of pastries, but this is not needed.

Well, I looked at Target, Kohl's, Penny's, Wal-Mart, and Gordman's the other night (while Christmas shopping), for a pizzelle maker, but no luck. The Prego machine online at Amazon got good reviews, so am going with that one and I can't wait for it to get here! These will be so fun to serve friends and family!

Well, the taste is great..I used almond extract with the vanilla. However, my dough was like cornbread batter..Is this right? Now on your pizzelle maker, you must spread the tsp. of batter around, right?

After reading this thread....I ordered a pizzelle maker. :FAINT: LOL.

So far this site has cost me:

1) A VITAMIX
2) A magic bullet
3) Jay Robb Protein Powder Addict
4) 27 flavors of Davinci
5) A NUWAVE oven


And....on my WISH list (and likely not for long)

A Keurig single cup coffee maker.

I think there are some out here that just like to see us spend our money.

I got my pizzelle press a few years ago from that on-line retailer, you know the one who keeps lowering book and dvd prices lately. It's a Cuisinart and I paid only $15.00 for it.
