Hey Ms. Woods -- if you just need something to make stuffing out of, a lot of people use oopsies. You could also use low-carb bread from Wal-Mart, if you didn't want to bake cornbread to make stuffing.

We usually use bread in our stuffing, but I can't wait to try a nice slice of this cornbread with chili! That's something I have really been missing.

You can always make a fresh pan for supper and have leftovers for the following day. This bread also freezes really well.

I grew up on cornbread and milk, minus the sweetener. I also had some this way as my dinner the night I made this. Tasted just like the real thing.

i can't wait to try this new recipe, I absolutely love the original recipe.

I'm going to make stuffing with it (as others have suggested)

The family is going to the local VFW. Sometimes things change right before your eyes.


BTW....I stopped smoking!!!!! 2 packs a day for 31 years

As a former smoker myself I know how hard that is. I've been smoke free since 1991. You will still get cravings for years but hang in there, eventually they will go away.

I love you!!!
Your cornbread is fantastic!!! It is the real deal! Since we don't like sweet cornbread, I left out the splenda. Just perfect! Thank you! We did fall in love with sweet hushpuppies in Myrtle Beach this summer and I will add splenda back in to try this recipe for hushpuppies.

Thank you soooo much for this recipe. I just had a piece with homemade chili on top and it was fabulous! I just can't abide the taste of most of the lowcarb baking ingredients like WPI and carbalose and carbquick even though I've tried and tried so when I see a recipe for a bread that uses what I call "regular" stuff I like to give it a go. I must say that even in my prelowcarb days I never made a better cornbread. You rock, Chicken Lady!

Maybe the Bob's Red Mill is packed closer together than just-ground cornmeal. What if you used 1/4 cup of the Bob's Red Mill, if the nutritional info is comparable to 1/3 cup homemade?

Thanks for your answer. I did see that but it doesn't give calories. I realize most people don't count calories and I don't usually but when I suspect something is very high I know I need to limit myself and I suspect this is very high. I think there would be almost 2,000 for the almond meal alone.

Ok..if someone was going to buy a coffee grinder to grind popcorn in..which should I get..the ones from Walmart are junk for something hard a popcorn! I was looking at Krups.

I don't think you can go wrong with a Krups 203. I've had a white one for years (80's?) and just bought another one (black, so I know which is which) in the last few months for things like this - non-coffee things to grind (almond meal, flax, etc.). This way the coffee flavor won't carry over.
