Husband is working super late tonight so I threw together what my college girl has been eating while at school - yes, she's doing the keto thing now too!

Two chicken breasts (Walmart Great Value brand - pre-cooked Grilled & Glazed ... 110 calories and 1 carb each. Daughter doesn't have an oven readily available so she picked these up while shopping - they're really not bad at all!)

Wholly guacamole 100 calorie mini

1/3 cup Italian style shredded cheese

2 tablespoons of sour cream

I could've put it on top of riced cauliflower but that would've been WAY too much food. I would definitely do this again for dinner - or maybe lunch and just have 1 chicken breast.

She's called it her fake Chipotle's bowl ... and it's pretty darned good.

460 total calories

DH wanted a cheeseburger and I didn't. I decided to sauté my serving of ground beef with onions and garlic and then simmer in marinara sauce for a bit. Stirred in an ounce of Asiago and sprinkled another ounce (half Asiago and half parmasean) over the top. 9 carbs.

Went to red lobster with friends. Had small lobster tail with butter, 1 piece cold shrimp cocktail, snitched 1of dh's coconut shrimp, a small pinch of their cheddar biscuit, 2 sips of dh's merlot and dish of broccoli. Delish.

When we got home I had a spoon of peanut butter frosted with butter and woke up to a nice loss.

Also walked an hour yesterday and pushed the water.

Roasted a whole chicken with some sprouts. Dipped the sprouts in some Marie's Asiago Peppercorn dressing and ate some chicken breast with buttery, crispy skin. Yum!

Bacon wrapped chicken tenders

I'll have blue cheese dressing as a dip and DH will have ranch.

I'll probably also have some asparagus leftover from last night ... my ribeye was too big (poor me!) and I couldn't fit a bit of veggies in.

Eggplant parm. I fried a few slices of eggplant that I coated with grated parm cheese, then topped them with marinara and mozz before popping in under the broiler. Gave me that perfect fatty, crispy, creamy combo. 15 carbs.

Zero breakfast except for my coffee concoction. Lunch will be rotisserie chicken. Dinner will be rotisserie chicken with shredded cheese, jalapeno peppers, sour cream, and maybe avocado so it's like Holly's daughter's faux chipotle bowl.

Tried something new tonight and it came out good. I steamed cauli rice in the microwave and then sauteed a cup of it in butter and chicken bone broth. Added fried onions and mushrooms and simmered a bit. Then added sliced Italian sausage and parmasean cheese. Came out like a risotto! 12 carbs.

Tonight I had an exposed veggie omelette I cooked the veggies in a separate pan with lots of butter. Then I cooked the two beaten eggs in a pan with butter. I added cheese then put a lid on it so that it cooked without flipping. I added the veggies to the top plus sriracha and voila!

I'm on a roll with my veggie omelettes.
Tonight I'll have another just like the one last night. I sauteed red onion, green and red peppers, green onions, and mushrooms in one skillet then cooked the egg with cheese in another skillet. I didn't fold the omelette, I just covered it with a lid so that the top cooked. Then I topped it with the veggies when it was done. It was soooooo good.

I think I will also have a breakfast omelette from the cafeteria at work.

Portabella and parmasean omlette with a small side salad of spring mix, shaved parm, parm crisps, and parmasean peppercorn dressing (see a trend here?). I'm in a sharp cheese kinda mood! All measured though, so one ounce of fresh parm (1 carb), 1 TBLS of parm crisps (1 carb), and 1 TBLS of dressing (1 carb). Counting the mushrooms and lettuce, dinner is 8 carbs total.
