LC Hot and Sour Soup

This is my husband's favorite Asian soup. We eat it at our Chinese
restaurant in Dana Point, near the harbor. It's called Peking Dragon and
we are patrons for the last 25 or more years. DH never gets enough of this
soup and I decided to try to recapture all of the flavors. He said YES YES
YES, I did. So I'm sharing this with you. There is a note at the bottom
that I did use 'corn starch' and since it is not LC or Keto, I suggest you
use one of the gums Guar or whichever you favor as a thickening aid.
We hope you will try this and enjoy as much as we do.

Barbo's Hot and Sour Soup**
Ingredients:
8 cups chicken, and beef stock*
8 ounces shiitake mushrooms,sliced thin, no stems
8 oz. water chestnuts, sliced
8 oz. bamboo shoots, halved
12-16 oz. baby shrimp
1/4 cup rice vinegar, or more to taste
1/4 cup reduced-sodium soy sauce,or Tamari
1 teaspoon ground ginger, opt (left out had none)
1 teaspoon garlic sauce, Sambal Oleek or what's on hand
1/4 cup cornstarch
1 pkg. Hot and Sour from Ralph's Mkt.opt.(this has ginger taste)
2 large eggs, well beaten
8 ounces firm tofu*, cut into 1/2-inch cubes
4 green onions (scallions), thinly sliced
1 teaspoon toasted sesame oil
White pepper to taste

Directions:

Set aside ¼ cup of the chicken/beef stock for later use.
Add the remaining 7 ¾ cups chicken/beef stock,mushrooms,bamboo shoots,water chestnuts, rice wine vinegar, soy sauce, ginger and chili garlic sauce to a large pot, and stir to combine. Heat over medium-high heat until the soup reaches a simmer.
While the soup is heating, whisk together the ¼ cup of stock (that you had set aside) and cornstarch& Hot/Sour pack in a small bowl until completely smooth. Once the soup has reached a boil, stir in the,Hot Sour pack, cornstarch mixture and stir for 1 minute or so until the soup has thickened. Turn heat to simmer.
Continue stirring the soup in a circular motion, then drizzle in the eggs in a thin stream (while still stirring the soup) to create egg ribbons. Stir in the tofu,shrimp, half of the green onions, and sesame oil. Then season the soup with white pepper to taste. If you'd like a more "sour" soup, feel free to add in another tablespoon or two of rice wine vinegar as well. Or if you'd like a spicier soup, add in more chili garlic sauce.
Serve immediately, garnished with the extra green onions.
FOR THE TABLE: Rice vinegar, Tamari, garlic hot sauce, sliced green onions.
*I had home made chicken and beef stock. Very Yummy!
** I used corn starch which is not a keto or LC ingredient. You can substitue guar gum or other
low carb gums to thicken the soup, or leave it out.

Yum, Barbo! We love hot and sour soup too, Barbo. The nearest Chinese restaurant, Chef Lee's, makes awesome H & S soup and we buy the large, which is two 1-quart containers, for about $9 and enjoy several meals from it.

Your recipe sounds really good - I need to try it.

My DH's favorite soup, too. I've only recently begun to like it. Your recipe, Barbo, could be a full meal!

Found another recipe on a site hosted by a young Chinese lady. Can't give site here, but you can look up "authentic" and "omnivore" and find it. She gives pretty specific tips for this soup.

You can even use just plain water, though I like homemade broth. This one also calls for dried wood ear mushrooms. An Asian grocery would have them or order online. I didn't even put the pork or tofu in it and it was still delicious.

Too bad it's getting a bit warm around here for soup days!

Ginny,
This is me not bragging but this soup is really wonderful and authentic tasting.
We had it again tonight, this time no baby shrimp, I used tender, roasted chicken.
Kid you not, this is delish. I am surprised it has not garnered more attention.

Barbo, what's in the Ralph's Hot and Sour mix? We don't have Ralph's here but perhaps there is another brand of mix that would contain similar ingredients?

That is an optional ingredient. The no no in it is corn starch.
Maybe a dab of sugar. As I say it is not necessary.
