Danish Donuts (Aebleskivers)

When Better Than Flour was first posted, we all were trying out recipes.
I can't remember if I posted this or not.It is very delish. You can drop
a little cut up strawberries or a raspberry, blueberry or two in the middle
if you dare


DANISH DONUTS (AEBLESKIVERS) SF/GF
Makes 14 donuts
Dry Ingredients:
1 c. Better than Flour Mix
1/2 cup plus 2 tbs. Swerve or sugar sub of your choice
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. combination of nutmeg, allspice, pumpkin pie spice

Combine with whisk or run through sieve. Set aside

Wet Ingredients:
1 egg, beaten
1/4 c. oil
1 1/2 c. buttermilk (approx)
1 tsp. vanilla extract
Melted butter or oil
Beat together well then add it to the dry ingredients. If your
batter is too stiff, add some more buttermilk, until you
have a nice soft batter.

Pour a tsp. of oil or melted butter into each aebleskiver opening, get it hot.
Drop batter into each one and fry them on one side until the
raw side has 'set up'. With a toothpick, knitting needle or small
chop stick turn them over for a few minutes. Cooking them through.
Cool. Roll in powdered sugar sub. with cinnamon. Or make a
cream cheese frosting and top with toasted pecans.

*Your weather may be more humid than mine. This will affect
your batter. It needs to be moist like a soft thick batter. Not like
a dough. When you use your buttermilk, use 1 c. and then beat
and add enough to get the desired batter. I had to use more.
These were light yet
moist. We really like them. Next time I shall put a little cooked fruit
in the middle.

I fill my ableskivers with a small amount of sf jam, and have also put a bit of cooked sausage in there - yummy with sf maple syrup!
