I have about 60z of leftover ricotta cheese! What can I make with it?

Thanks Lisa....that does look good! I'm wondering if I can cut the recipe in half since I don't have that much ricotta cheese? I do have the other ingredients though........

I use it in place of cream cheese in my oopsies. I use 6 eggs & 6 oz ricotta cheese.

Gary's Sweet Ricotta Pudding recipe is AWESOME! I added a little almond extract. It was a delicious, cool summer dessert.

I think Jacksmixedtape posted this originally, but you can use it to make a dessert very close to a Wendy's Frosty, especially if you have Hershey's *dark* cocoa powder. Add ricotta, add some cream/half and half/almond milk/whatever floats your boat for LC, sweetener, cocoa powder and blend. Even better if you can stick it in the freezer for 15-30 mins or so.

Sorry I don't have precise amounts but it is *very* close to a Frosty!

"Fried Mush" from Dana Carpenders "500 Low Carb recipes".

This is my adaptation:

4 eggs
1/2 cup ricotta
1/4 cup hvy cream
dash of cinn & nutmeg
splash of Vanilla DaVinci's
packet or so stevia or other sweetener of choice

mix and pour into sprayed 8x8 pan. 350 deg about 25 min (knife poked in middle comes out clean) Slice into squares or fingers and fry in a little oil.

We then eat with a little SF syrup or whipped cream.

My whole family loves this one, even the non-lc. Tastes like french toast and is quite filling...


ALSO,
mix a spoonful or two into LC spaghetti sauce and it makes a great rosa sauce. Also, I've mixed it into my meatloaf before... makes it quite moist.

Another fave from Dana's 500 LCR book is the Perfect Protein Pancakes... don't have it in front of me right now so this is from memory:

1 egg
1/4 c ricotta
1/4 c whey protein (I use vanilla)
baking soda (1/4 tsp?)
pinch salt

Mix up (I use a hand blender) until smooth and cook on griddle. Make small (silver dollar size) pancakes as these puppies are very fragile. But yummy! I add cinnamon and sometimes serve w/ Irish butter and a dab of homemade sf jam.
